How does Gluten Free Peanut Butter Banana Chocolate Chip Muffins Sound?

When people are first trying to learn how to eat gluten free baking can be a tremendous problem.

Baking without wheat can be difficult, but it doesn't have to be. It can also be delicious. Here's a delicious Peanut Butter Banana Chocolate Muffin Recipe.

Peanut Butter Banana Chocolate Chip Muffins (Gluten-Free)
This recipe comes to us from Stefi Kaplan.

Ingredients:
3 bananas
2 eggs
½ cup raw sugar
½ cup creamy peanut butter
1 ¾ cup white rice flour
2 teaspoons baking powder
1 teaspoon baking soda
1/3 cup butter or shortening (melted)
½ cup buttermilk (if dairy products are a problem, use ½ cup rice milk mixed with 1 teaspoon lemon juice)
½ cup chocolate chips

Directions:
Preheat oven to 350F. Mix first 4 ingredients in a food processor. Blend for 1 minute. Combine dry ingredients in a mixing bowl. When thoroughly mixed, add to food processor, along w/ the butter and milk. Blend well. Add the chocolate chips and press "pulse" once or twice. Ladle the batter into muffin tins lined w/ papers, filling each paper to the top. Bake for about 12 minutes, or until the muffins are firm to the touch. Cool and serve. Top with frosting or chocolate drizzles, if desired.

With a husband who has been on a gluten-free diet for twenty years, I've tried just about every alternative I could find to substitute for "all purpose flour" in traditional recipes, including mixing my own from a vast array of other flours. Some were OK, some failed in texture, some failed in taste, some were downright inedible. With Beth's Gluten-Free All-Purpose Flour, I've finally found a product that works in most of the cookies, tea breads, muffins, and so on that we all enjoy, and is also affordable for everyday use. It can be substituted in an equal quantity just about anywhere a recipe calls for "all purpose flour" - obviously you'll need to experiment if you use it for yeast breads. Oh, and by the way, it doesn't taste "gluten-free". We had a very merry Christmas at our house!

This is great for a gluten, corn, soy and casein free cheesy cracker. The orange color and spice mix really fools you into thinking you're eating a cheddar flavored cracker. This is our replacement for goldfish crackers and cheesy chex mix.

Gluten Free Snacks ~ Gluten Free Fruit and Nut Bars Recipe 

Are you trying to learn how to eat gluten free, but have a hard time finding gluten free snacks to hold you over between meals? This gluten free snack recipe should help you out.

Gluten Free Fruit 'n' Nut Bars recipe

1 cup dried apples
1/2 cup dried chopped apricots
2 cups apple cider
1 cup water
1/2 cup dried kasha
1 cup Craisins
2 teaspoons cinnamon
1 teaspoon vanilla extract
1/4 cup apple butter
1 cup sultana raisins
1 1/2 cups buckwheat flour
2 cups sliced almonds
2 cups sweetened coconut
1 egg replacer
1/2 cup applesauce
1/2 cup brown sugar
1/2 cup maple syrup
1 teaspoon baking powder

Heat oven to 350 degrees F.

Put dried apples, apricots and Craisins in a pot with kasha, water, apple cider, cinnamon and vanilla extract. Bring contents of pot to boil and stir until mixture is creamy. Add the apple butter and stir until well blended. Remove from heat.

Blend in raisins, flour, almonds, coconut, egg replacer, baking powder, applesauce, brown sugar and maple syrup. Stir until well combined. Place mixture in two well greased 9 x 13-inch pans.

Bake for 25 minutes.

Cut immediately, placing bars on cooling rack.

These bars can be made in bulk and frozen for future use.
