I've never considered indoor grilling. Being in Australia we have a BBQ on the back verandah always ready to go! It gives any meat the best flavour. My kids beg for 'plain chicken' so they can load on the cranberry! I'm keen to try a homemade BBQ sauce though so I'll bookmark to follow this up! Thank you!

My chicken always sticks to the grill (it’s a simple grilling tray for indoor burner use not the kind with the grilling bars) and I wasn’t sure about using olive oil for it as I’m afraid that it might not be healthy.
Maybe I should give it a try then. Thanks for the tips!

Great lens! Your picture of the chicken on the grill is very appetizing :) Yum! My family's favorite marinade for grilled chicken is Lawrys Teriyaki, grilled with pineapple slices and served with rice and broccali. We use a pyrometer to assure the proper doneness to avoid overcooked-dry or yucky-raw ... very reliable way to cook meat.

My sister and I always do something picnic at the garden. Thanks for this lens we can not perfectly grill chicken breasts.
  • BFuniv.com Sep 7, 2011 @ 1:45 pm | delete
I prefer red meat. Part of the reason for that is that the first time I BBQed chicken it came out all wrong. It's been okay a few times since, but a steak is almost fool proof (depending on the fool). I guess it's time to try chicken again now that I've read this handy lens.

Nice lens! I'm always leery of under-cooking chicken breasts, but if you grill them too long, they really do get dry. I'm definitely a big fan of basting chicken breasts with barbecue sauce, too!

hmmm, that looks yummy! as for myself, I actually prefer less condiments. Just olive oil, salt, pepper and a little rosemary (=
  • iancunn Jul 9, 2011 @ 10:59 am | delete
@erieconstruction - I wouldn't worry about checking to see if the chicken is cooked, it's not embarrassing to ensure your eating guests are safe. If you don't feel confident, cook them in the oven first and then add to the barby for a few minutes at the end to get the nice barby taste. Always make sure the juice run clear and all will be good ;)
  • iancunn Jul 9, 2011 @ 10:54 am | delete
I love barbecues and the smell of food cooking on the barby just gets you salivating. Chicken is no exception and the lovely chargrilled stripes that burn into it by the end of cooking just make you want to wolf the lot! Yum!
  • coach_moreno Jul 9, 2011 @ 9:40 am | delete
Nice lens. Thanks. How long should one marinate the breasts? And, what is your favorite method?

Having never successfully cooked chicked, great article. On the other hand, I'd really like to know more about grilling heat for chicken, and how you can tell its finished without cutting it open. I always look like a putz cutting open grilled chicken to see if its done. I don't want anyone to get sick though!

It doesn't sound as special as some of the Lawry's marinades, but I really like to use Kraft's Yesty Italian salad dressing as a marinade for chicken breasts. Makes tender & tasty chicken!

  • BuddhaDooDah Jun 16, 2011 @ 3:54 pm | delete
Chicken breasts are a nightmare to grill because they are not uniform in size. The middle takes several minutes to cook through, which overcooks and dries out the thin end of the cut. If you want to grill chicken breasts, par-cook them indoors and finish them on the grill to get the smoky flavor.

I like your chicken recipe. Adding fresh squeezed orange and lemon juices is also very tasty to marinate grilled chicken. Make sure you use fresh fruit though.
  • plushdeco Apr 14, 2011 @ 2:33 am | delete
Chicken is great but if you want something a little different, try duck. It's more tender, won't dry up and you can leave it a little uncooked in the middle for extra tenderness. Duck is like beef so you don't have to cook it fully like chicken and pork. Have a try with a duck and see what do you think.

    Great recipies with chicken though.

Nice lens! (Yummy lens!) ... We enjoy barbequeing and grilling our chicken (when the weather warms up a tad). After spending a lot of time on Guam, we learned a tropical-style marinade that really "flavors-up" the meat. And you can now find it in *some* stores--it's called "Chaka's MMM Sauce" --the fellow who sells and markets this stuff is a Guamanian guy (who just became the mayor of his small California town). Just thought you'd like to know. Congrats on a great lens. I've liked, thumbs-upped, and favorited your masterpiece!

I don't measure anything, but here's a good marinade I invented. Put fresh lemon juice, olive oil, salt, finely chopped garlic, finely chopped fresh ginger, turmeric, ground coriander (lots), cinnamon and freshly ground black, white, pink and green peppercorns...all in a ziplock bag. Toss in skinless, boneless chicken breast. Marinate for half and hour or more. Grill. Meanwhile, saute sliced crimini or portobello mushrooms and maybe sweet onion wedges in olive oil in a saucepan. Cut grilled chicken into 1/4 inch slices and toss in with mushrooms. Add a little red wine, add more coriander, turmeric, fresh pepper and stir together. Quick and easy...and tasty.

A tasty and healthy option to marinate chicken is to use fat free salad dressing. I put them in a bowl with a good amount of dressing, then pierce the chicken with a fork, flipping it and doing both sides to be sure the flavor gets in. Then I cover the bowl with plastic wrap for a day and grill them. This is a great option for those trying to eat healthy and Reduce Stomach Fat

A little trick to make sure the chicken is fully cooked , which my mother taught me, is to stick a fork in the meat when you think it is cooked. If the juice coming out is clear, is it cooked. If not, cook it some more!

Chicken breast is so healthy and delicious when done right! I love to fire up the gas grill outside and lay out some chicken breasts to grill while watching the game.

As I'm from South Africa, I do not know these sauces, but I love the idea of the beer can chicken. It is quite a favorite here to make it on a Webber Charcoal grill that is the favorite grill here!

My favorite is a marinade made up of olive oil, balsamic vinegar and fresh rosemary (about 3 tablespoons). You can let the chicken marinate in this mixture for about 4 hours. The balsamic vinegar adds a nice color to the chicken breasts and they cook very nicely, and the rosemary adds a wonderful flavor. Good lens. I've used Lawry's Lemon Pepper marinade which I've enjoyed. Well, now I'm hungry - I'm going to eat!

Hello, I have recently been in Spain and tasted some unbelievable Jamon, can someone explain the difference between serrano ham and iberico ham?

We like to marinate our chicken breast with garlic, olive oil, lemon juice, and fresh oregano. It's a greek-ish marinade. After marinating, we skewer the chicken with fresh vegatables and either grill or broil them (depending on weather).

I like to baste the chicken pieces in Italian dressing when bbq'ing them, then finish with a nice sweet sauce. Nice work on this article.
