How to Make a Fruit Pizza Using a Sugar Cookie Crust

What is a fruit pizza?
Sounds delicious
It's like eating sugar cookie cake that you bake like a pizza. The difference is it's sweet and not savory. It is topped with a creamy layer of sweetness instead of sauce and it has fruit on top.It's really more like a tart or a pastry than a pizza. But it's fun to call it a pizza because it resembles one.

Dessert pizzas are now being offered at places you'd never expect to see them. The Domino's Pizza chain has started offering fruit pizzas. They wanted to find a dessert that would cook in their pizza ovens in the same time it took to make their pizzas. And they needed one that could be assembled quickly.
Thus, the dessert pizza was born. A perfect alternate to your usually average cookies.
SUGAR COOKIE FRUIT PIZZA

- Total Time: 35 Minutes
If you want to make a dessert pizza at home, all you'll really need for equipment is a pizza pan and beaters. Here's a great recipe from Cooks.com to get you started on your first fruit pie.
Ingredients
- 1 (17 oz.) pkg. Quaker Sugar Cookie Mix (or equivalent)
- 1/3 c. vegetable shortening
- 1 egg
- 1 (8 oz.) pkg. cream cheese softened
- 1/4 c. sugar
- 1 tbsp. lemon juice
- Orange marmalade or apricot jam
- Assorted fruit such as grapes
- Bananas
- Blueberries
- Peaches
- Kiwi
- Strawberries
Instructions
Mix cookie mix, shortening and egg. Spread on greased 14 inch pizza pan. Bake at 375 degrees for 15 minutes and allow to cool.
Mix cream cheese, sugar and lemon juice and spread on cooled crust.
Arrange sliced fruit on cream cheese in decorative manner.
Mix 1/2 cup orange marmalade or apricot jam with 2 tablespoons water and spoon over fruit. Refrigerate.

Ingredients
- Crust: 1 20-ounce package store-bought sugar cookie dough (Refrigerated)
- Sauce: 1 8-ounce package cream cheese (softened) - 1/3 cup sugar - 1/2 tsp. vanilla
- Glaze: 1/4 cup orange marmalade (can also use apricot strawberry or raspberry) - 1 Tbsp. water
- Drizzle (optional): 1/2 cup chocolate chips melted
- Toppings: (everything listed below)
- Fresh or canned peach slices drained
- Whole strawberries cut in half
- Fresh or frozen blueberries drained
- Kiwi fruit peeled
- Raspberries
- Grapes (no seeds)
- Bananas
- Pineapple chunks or rings drained
- Apples (washed
- peeled and cored)
- Mandarin oranges drained
Instructions
1. Pre-Heat oven to 375° F
2. Slice cookie dough as directed on package
3. Arrange cookie dough in single layer in bottom of a 15x10x1-inch baking pan. (A large pizza pan will also work).
4. Using floured fingers, press dough evenly onto pan to form crust
5. Bake at 375° F for 16-20 minutes or until golden brown
6. Cool crust completely
7. While crust is cooling, in a small bowl, beat together cream cheese, sugar and vanilla until fluffy
8. Spread mixture over cooled cookie crust
9. Refrigerate several hours
10. Arrange fruit in attractive layers or designs over cream cheese "sauce" layer
11. Combine marmalade and water into a glaze and carefully brush glaze over fruit
12. Drizzle warm chocolate chip mixture for additional sweet topping
13. Refrigerate at least 1 hour before serving
14. Cut into slices or squares and serve immediately
15. Store any leftovers in the refrigerator
