Never thought I'd be making and showing off anything I did in the kitchen, that is until I perfected my pizza making skills with the pizza dough and "secret ingredient" sauce recipes showcased here.

Second Step - Homemade Pizza Dough
Be patient it will rise

- Serves: Two 12" Crusts
Ingredients
- 1 package active dry yeast
- 2 1/2 cups sifted flour
- 1 teaspoon salt
- 1 cup warm water; 110-115 degrees
- 1 tablespoon cooking oil
Instructions
In a large mixing bowl, combine the yeast, 1 cup of flour, and the salt. Mix.
Next, add the water and oil. Beat on low speed for 30 seconds. Scrape the sides of the bowl and continue to beat on high speed for 3 minutes.
Now by hand, stir in enough flour to make the dough stiff. Knead until smooth which can take up to 10 minutes. Place in a well greased bowl and turn the dough until it is lightly greased. Cover and let rise for about 1 1/2 hours or until the dough has doubled in size.
Punch it down and chill for 2 hours.
Cut the dough in half. On a floured surface, roll the halves into 12 inch circles and about 1/8 inch thick. Brush the surfaces of the dough with olive oil and add the toppings of your choice. Cook at 375°F for 25 - 35 minutes.
Tips
-Use bread flour for a softer crust.
-Kneading for 8-10 minutes is really important
-If cheese and or toppings are browning before the crust is cooked place a piece of foil over the top until done.

We have a white KitchenAid...wish it was any color but white now that it's my go-to mixer. Anyway, for kitchen tools, this is the way to go!
Third Step - Seriously Good Pizza Sauce
Simmer and smell the scents of Italy

Ingredients
- Olive oil
- 3 - 4 Garlic cloves; finely chopped
- 1/2 cup onion; finely chopped
- Whole tomatoes; 28 oz can; juice and all
- Tomato paste; 3 heaping tablespoons
- 2 tablespoons brown sugar
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1- 2 teaspoons dried red chile peppers
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
- 1/4 teaspoon dried thyme
Instructions
In a large sauce or frying pan saute finely chopped garlic and onions in a small amount of olive oil for about 5 minutes, then add remaining ingredients.
Poke tomatoes with a fork, unless you want tomato juice all over your face and then mash all ingredients together. Bring to a boil and then set heat to low for 1-2 hours; uncovered.
Mash and stir occasionally throughout the cooking time. Sauce will be thicker then the standard spaghetti sauce, which makes it perfect to spread on your homemade pizza dough.
Tips
-Adjust the seasonings to your taste
-Brown sugar cuts the acid in the tomatoes
-I like to have the sauce at room temp or cooler before putting on the fresh pizza dough

Pizza Making Steps
- Roll out pizza dough and place in your favorite pizza pan.
- Spread pizza sauce all the way to edges of dough, making sure to have a nice thick layer.
- Add heaping amounts of shredded mozzarella or cheese of your choice.
- Top with your favorite ingredients.
- Bake according to your recipe
- ENJOY!
