Black Icing

Black icing can be used to decorate some really classy cakes. It's essential if you want to decorate a cake with a goth theme and for some Twilight birthday cakes. In smaller quanities it is useful for writing or for decorating figures, for instance if you want to ice a groom dressed in a smart tux onto a wedding cake.Black icing has something of a reputation for being difficult - if enough food coloring is used to make white icing black it can leave a bitter taste - but there are several ways of making black icing which help to get a good dark black. It is also possible to buy small quantities of black icing.

Fondant icing is soft and squidgy; it can be rolled, cut, shaped and molded. Add drops of food coloring to make it any color you want: pink, blue, yellow, red or even a neon color. Commercial fondant can be bought, but it is much cheaper - and more fun - to make fondant icing in your own kitchen.

Which is best?
The use of royal icing is quite different. Royal icing has a cachét because it it quite formal, so it is the frosting of choice for wedding cakes or Christmas cakes. But what of everyday cake of themed cakes like my princess birthday cakes or my fairy cupcakes. Which type of frosting you think is best for those? Fondant or butter cream icing?

Wedding Cake with Royal Icing

Royal icing is the thick, firm icing used for Christmas cakes and wedding cakes like the picture. It can be piped into attractive shapes and, because it has a fine texture, is great for detailed colored images and text. Sometimes the icing is colored, but or Christmas and wedding cakes snow white royal icing is usual.

Frosting or Icing?
I have always talked about icing - that's the British way. Many other people decorate their cakes with frosting.

- I do not do cakes. Well, I like to eat cake. But I have noticed that cake design has an all new look and the confections are just awesome. Adding to the smooth look with fondant brings a whole dimension. Luck with your new group.
