This Spanish rice recipe is prepared using tomato sauce that cooks with the rice, as well as a few cups of tasty chicken broth. Both liquids blend their flavors into the rice to create a delightful combination of tastes, and peas and carrots are mixed in with the rice to give the rice some extra flavor and color. Preparing the rice will take you a matter of minutes, and you can simply let it sit and cook without having to worry about it.

Mother's Spanish Rice Recipe
Ingredients
- 1 ½ cups of white rice
- 1 small onion
- 3 cloves of garlic
- 2 ½ cups of chicken stock
- 1 cup of tomato sauce
- 1 can of mixed vegetables (optional)
Instructions
To begin, dice the onions finely, and chop the garlic as small as possible.
Place a pot on the stove to heat, and pour oil into the pot it barely covers the entire surface of the bottom. Let the oil heat, and add in the garlic and onions to fry.
Fry until the garlic is golden brown, and add the rice in to fry for a few minutes as well.
Fry the rice for about 5 minutes, stirring the cooking rice every 30 seconds or so.
Once the rice is fried, pour in the chicken stock and tomato sauce. Mix them around for a few seconds, and then add in the canned vegetables.
Cover the pot with a lid, and let it sit for about 30 minutes. You can tell that the rice is cooked when you first smell the slightest hint of burnt tomato.
Quickly remove the rice from the fire and serve hot.

How to Make Spanish Rice Like a Pro
Preparing Spanish rice like a pro will take a bit of time and practice to get it right. Spanish rice combines the flavors of chicken broth and tomato sauce to infuse the rice with all of the delicious taste for which it is known. The problem is that tomato sauce burns much quicker than water or chicken stock, and it takes longer to cook the rice as well. In order to ensure that your Spanish rice does not burn, it is important to follow a specific procedure.
To begin, you will need to fry the uncooked rice with some olive or vegetable oil. Frying the rice with some garlic and onions helps to add extra flavor, and heats the rice to ensure that it will cook faster. By frying the rice before you cook it, you make it much more difficult for the rice to burn and you ensure that your rice is prepared as flavorful as possible.
Once the rice has fried for 5 to 10 minutes, you will need to add the chicken stock and tomato sauce. The ratio is roughly 5 parts chicken stock to 2 parts tomato sauce to three parts rice. If you follow this ratio, you will get rice that is delightfully flavorful, but that is thoroughly cooked. Add the liquids into the rice, as well as a few canned vegetables for extra color and flavor. Let the liquids heat until they boil, then turn the fire onto a low setting and cover the pot with a lid. Within 15 or 20 minutes, your rice will be done.
