How to make Weight Watcher friendly crab cakes

Looking to make delicious low calorie crab cakes?

I've lightened up this recipe from the original which used a full stick of butter (just apply it to my hips please....). These crab cakes are light and delicious and figure friendly.

I actually got the idea for these Weight Watcher friendly crab cakes from the restaurant manager at our local Bone Fish restaurant where the most delicious crab cakes ever are on the menu. The crab cakes were the best I'd ever had (and I live by the Chesapeake Bay) so I just had to learn how to make them. Eli, my Bone Fish friend, obliged by divulging the recipe. i only skinnied it up a bit to fit into the Weight Watchers program - these crab cakes are truly the best you'll ever have and are very easy to make and enjoy.

To make Weight Watchers friendly crab cakes, you will need:

These delicious crab cakes are only 3 points each on the Weight Watchers PointsPlus plan (if you make 6)!

The crab cakes are much easier to make with canned crab....16 ounces of lump crab meat
4 ounces scallops (doesn't matter if they're bay scallops or sea scallops)
3 egg whites
2 tsp Old Bay seasoning
1 tsp Dijon mustard
2 tbs melted butter
2 tbs chopped scallions

Directions:

Shhhh...don't tell your dinner guests how easy these are to make!

1. Pick through the lump crab meat and discard any shells. Keep the lumps together as much as you can.

2. Using a blender or food processor, puree the scallops and just one egg white and mix into the crab meat.

3. Add the Old Bay, butter, scallions, and mustard. Stir gently.

4. Whip the other 2 egg whites to a very soft peak stage and fold into the crab mixture. Form either 4 crab cakes (4 points each) or 6 cakes (3 points each).

5. Spray a non-stick pan with butter flavored Pam. Lightly fry each side until brown, about 3 or 4 minutes - use two spatulas to flip the crab cakes so you make sure they stay together.

Variations: Use 1/4 cup panko bread crumbs and lightly pat them onto the crab cakes before frying. If you've formed 4 crab cakes, adding the panko will add 1 point (5 points total). Interestingly though, if you form 6 cakes, they're still 3 PointsPlus point each.

Serve with a tender ear of corn (1 point) and a small salad. Just a perfect dinner for a summer evening!

    Tried them, loved them... only change I made was instead of scallops I found some little langostino lobster tails. They came in an 8 ounce package so I used them all with an extra egg white to help puree to the proper consistency. I added an extra half tsp of Old Bay for the additional volume (that, and I really like Old Bay), left out the scallions (not a fan), and they came out nicely! Served with some fresh sauteed green beans and herbed redskin potatoes. It was a great dinner, thank you for the recipe!

    Yup, add me to the list of people trying these. I love crab cakes but have yet to try making my own. Lower calories is a bonus.

    These are definitely yummy and very easy to make. A crab cake should be mostly crab and these are!
