During this time you need to cover your fermentation vessel, whatever it is, with cloth. You can't stopper it during this stage.
The secondary fermentation is a much longer process, sometimes months and it's at this time you need to fit an airlock. This is so that any gases can escape but no air can get into the wine and interfere with the fermentation process.
The fermentation process helps define your wine's taste and color so there are several ingredients you'll need to add during these stages. You'll need Potassium Bisulfite to keep the must clean of mould, a Pectic Enzyme for clarification and so on.
