Unless you are a 15 year old kid just looking for a quick buzz then the first sip you take will be your last. I can still remember the taste of my first wine. Syrupy and over sweet. It was disgusting! Mind you I still think I got half a bottle down me!

How To Make Grape Wine By Choosing The Correct Grape 

Grapes are the cornerstone of your wine

That's the first thing I learnt when I decided I wanted to know how to make grape wine. As this great ebook explained, the grape is the basis of your wine. While there are 1000's of different grapes and hybrid grapes etc I learnt a basic categorization. There are 3 kinds of basic grapes I needed to know a little bit about when I learned how to make grape wine.

The European wine grape

The grape you´ll want to work with to make those classic European wines like the Cabernet sauvignon. A good sugar content and not to acidic

Native Wild Grapes

A low sugar content and highly acidic. You need to treat this grape slightly different from the European when making wine from grapes.

North American Native Wine Grapes,

A reasonable sugar content but slightly on the acidic side. Again you'll have to treat the acidity somewhat. This is still a good grape however.

How To Make Grape Wine By Getting The Right Sugar Levels 

Sugar levels dictate how alcoholic your wine will be when you make homemade wine

I had no idea that this was important when I started out learning how to make grape wine. But I quickly learnt! You see not enough sugar will mean a low alcohol content wine. Too much, and you get a sickly sweet syrup of a wine. Rookie errors really.

So how much is too much? Well it depends on what kind of wine you are making and what kind of grape you are using. This is why it's important to learn a little bit about the wine making process first. You'll need to test your wine's sugar levels with a hydrometer to get the correct levels.

How To Make Grape Wine By Getting The Correct Acidity 

The correct acid levels give your wine flavor and body

Some grapes are naturally more acidic than others. Some will need some adjustment to the acidity levels, some a lot! It's important to learn how to measure the wine's acidity level correctly as this is very important to the final taste.

It's not just taste though. Incorrect acid levels will mess with the whole fermentation process. Getting it wrong can pretty much ruin your wine. At the very least it's going to look pretty weird.
