'Cool as a cucumber' isn't just a catchy phrase as the inner temperature of a cucumber can be up to 20 degrees cooler than the outside air!

 

OMG ... I've been enjoying cucumbers since I was knee high to a grasshopper in Northeastern Ohio ... those grasshoppers up there sure got to be mighty big you 'all! My favorite recipe for cucumbers involved either sour cream, vinegar, or onions! My grandmother and mother always seemed to make them the best.

Would you believe? When my hubby and I traveled to Hungary and Romania a couple of years ago, we were delighted to see cucumbers served so frequently with our meals!

Cucumbers also have a lot of other applications other than food; e.g., to reduce eyelid swelling or as a soothing facial mask, among other great uses!

Cucumbers in Sour Cream Recipe 

Hungry yet?

1 tbsp. sugar
1 c. sour cream
2 tbsp. vinegar
1 1/2 tsp. salt
Cucumbers and onions


Mix sugar, sour cream, vinegar and salt together. Peel - slice cucumbers and onions. Add to cream mixture and chill for 2 hours.

Creamy Cucumber Recipe: Without Sour Cream 

3 tablespoons mayonnaise
2 tablespoons milk
1 tablespoon vinegar
1 cucumber
1/2 teaspoon sugar
1/4 teaspoon salt
Dash of dill


Mix the mayonnaise, milk, vinegar, sugar and salt together in a small bowl. Mix until smooth.

Peel and slice the cucumber very thin. Pour the sauce over the cucumber; sprinkle with dill, serve. --www.cdkitchen.com.

Cucurbitaceae is a plant family commonly known as melons, gourds or cucurbits and includes crops like cucumbers, squashes (including pumpkins), luffas, melons and watermelons. The family is predominantly distributed around the tropics, where those with edible fruits were amongst the earliest cultivated plants in both the Old and New Worlds.

Most of the plants in this family are annual vines but there are also woody lianas, thorny shrubs, and trees (Dendrosicyos). Many species have large, yellow or white flowers. The stems are hairy and pentangular. Tendrils are present at 90° to the leaf petioles at nodes. Leaves are exstipulate alternate simple palmately lobed or palmately compound. The flowers are unisexual, with male and female flowers usually on different plants (dioecious), or less common on the same plant (monoecious). The female flowers have inferior ovaries. The fruit is often a kind of berry called a pepo.

Chilled Cucumber Soup Recipe

5 large cucumbers, peeled, seeded and quartered
1/2 c chopped mild onion (such as vidalia)
1-2 cloves minced garlic (degermed)
3 c low- or nonfat buttermilk
1 c nonfat plain yogurt
1/3 c fresh dill sprigs OR fresh spearmint leaves (not both)
2 Tablespoons fresh lemon juice
salt and pepper to taste
pinch of cayenne pepper


Combine onion, garlic, mint (or dill) and 1/2 c buttermilk in blender and puree thoroughly (don't want large chunks of either). Pour into large container. Coarsely puree the remaining ingredients together in several batches, dividing the buttermilk and yogurt to provide enough liquid for each batch. Add to the onion mixture. Taste for seasoning and adjust salt, pepper, or more lemon juice.

Refrigerate for at least 2 hours before serving. Keeps for several days. Serving suggestions: Garnish with mint leaves or dill sprigs, a dollop of sour cream, freshly toasted french bread croutons (rub cut garlic clove over crust, thinly slice bread, brush with olive oil and toast till lightly brown).

First pickled a really long time ago ... 

Some 4400 years ago in Mesopotamia!

Cucumbers were probably first pickled 4400 years ago in Mesopotamia. In India, pickles were well known by the Vedic period.

The pickling process was also known to the Ancient Greeks. Aristotle is reported to have praised pickled cucumbers for their healing effects. Julius Caesar's soldiers ate pickled cucumbers as health aids; many other brine-soaked foods were part of daily life in Ancient Rome. Cucumber pickling remained widespread across the Levant and Maghreb regions, where it is still very popular today.

Pickled cucumbers became popular in the United States due to the influence of the cuisine of Eastern European immigrants.

Cucumber Avocado Facial Cooling Mask Recipe

1/2 cup chopped cucumbers
1/2 cup chopped avocados
1 egg white
2 teaspoons powdered milk


Combine all the ingredients in a blender and process until a smooth paste like consistency is obtained.

Apply the mask immediately if you are short on time or else you can refrigerate the mask and apply after 30 minutes. This is wonderful in summer months.

To apply, in circular upward motions, apply 2 tbsps. of this mixture on your face and neck.
Allow the mask to remain on your face for 30 minutes or until it dries up.

To remove it, wash your face and neck with warm water followed by cold water.

Well, who knew that cucumbers were squashes! I love them and these recipes are amazing. Although when I was a kid Mom used to just soak them, thinly sliced, with sliced onions in vinegar water.
