I love cucumbers you all. Did you know that 'cool as a cucumber' isn't just a catchy phrase as the inner temperature of a cucumber can be up to 20 degrees cooler than the outside air!
I've been enjoying cucumbers since I was knee high to a grasshopper in Northeastern Ohio ... those grasshoppers up there sure got to be mighty big you 'all! My favorite recipe for cucumbers involved either sour cream, vinegar, or onions! My grandmother and mother always seemed to make them the best. Oh how I love cucumbers!
Would you believe? When my hubby and I traveled to Hungary and Romania a couple of years ago, we were delighted to see cucumbers served so frequently with our meals!
Cucumbers also have a lot of other applications other than food; e.g., to reduce eyelid swelling or as a soothing facial mask, among other great uses!

Cucumbers in Sour Cream Recipe
Yumm yumm ... definitely my favorite!

1 tbsp. sugar
1 c. sour cream
2 tbsp. vinegar
1 1/2 tsp. salt
Cucumbers and onions
Mix sugar, sour cream, vinegar and salt together. Peel - slice cucumbers and onions. Add to cream mixture and chill for 2 hours.

Creamy Cucumber Recipe: without Sour Cream
Another favorite of mine

3 tablespoons mayonnaise
2 tablespoons milk
1 tablespoon vinegar
1 cucumber
1/2 teaspoon sugar
1/4 teaspoon salt
Dash of dill
Mix the mayonnaise, milk, vinegar, sugar and salt together in a small bowl. Mix until smooth.
Peel and slice the cucumber very thin. Pour the sauce over the cucumber; sprinkle with dill, serve. --www.cdkitchen.com.
Chilled Cucumber Soup Recipe
This sounds absolutely yummy

5 large cucumbers, peeled, seeded and quartered
1/2 c chopped mild onion (such as vidalia)
1-2 cloves minced garlic (degermed)
3 c low- or nonfat buttermilk
1 c nonfat plain yogurt
1/3 c fresh dill sprigs OR fresh spearmint leaves (not both)
2 Tablespoons fresh lemon juice
salt and pepper to taste
pinch of cayenne pepper
Combine onion, garlic, mint (or dill) and 1/2 c buttermilk in blender and puree thoroughly (don't want large chunks of either). Pour into large container. Coarsely puree the remaining ingredients together in several batches, dividing the buttermilk and yogurt to provide enough liquid for each batch. Add to the onion mixture. Taste for seasoning and adjust salt, pepper, or more lemon juice.
Refrigerate for at least 2 hours before serving. Keeps for several days. Serving suggestions: Garnish with mint leaves or dill sprigs, a dollop of sour cream, freshly toasted french bread croutons (rub cut garlic clove over crust, thinly slice bread, brush with olive oil and toast till lightly brown).

1/2 cup chopped cucumbers
1/2 cup chopped avocados
1 egg white
2 teaspoons powdered milk
Combine all the ingredients in a blender and process until a smooth paste like consistency is obtained.
Apply the mask immediately if you are short on time or else you can refrigerate the mask and apply after 30 minutes. This is wonderful in summer months.
To apply, in circular upward motions, apply 2 tbsps. of this mixture on your face and neck.
Allow the mask to remain on your face for 30 minutes or until it dries up.
To remove it, wash your face and neck with warm water followed by cold water.
