History of Maple Syrup

The North American Indians used maple syrup as both a food and a medicine. Making maple syrup was a tradition for the Indians and a fairly complex process. The settlers developed new ways to condense the syrup.

It then became a popular sweetener in colonial times as it was easier to obtain than the expensive sugar from the West Indies. However, as sugar became less expensive and easier to obtain, it replaced maple syrup. Maple syrup production declined and is now only a fraction of what it was in the early 20th century.
