Activities for an iCarly party are actually pretty easy. You can get any of the iCarly games and play those, but better yet - play games based on things they do on the show! Here's a list to get you started:

Random Dancing - Have to do this. Keep a cool song (one from iCarly?) on the CD player and pause it. Every now and then, yell "Ra-a-an-dom Dancing" and start the music for 15 seconds or so. (Note that on the show, the lights go out and there's a strobe light. You could just flick the light switch on and off while the music runs.)

Pathetic Plays/Terrible Theater/Silly Skits - If you've seen the one where the girl thinks the mustache is a squirrel, you know what I'm talking about. There are a lot more examples on the iCarly website. Have a box of random props ready and let the kids make up their own stupid skits. Time limits will increase the silliness and you can record them for future embarrassment.

What Am I Tickling You With? - You'll need a blindfold (or head bag!) so the victim can't see, put 30 seconds on the timer, then tickle away. They have to try to guess what item you're tickling them with before time runs out. (Examples of strange things to use for the tickling: candlestick, stuffed animal, spatula, notebook.) This one could get a little weird, so be safe.

Hey, What Am I Sitting On? Hey, What Am I Licking? - Variations of the previous game. I'm serious.

George the Bra Ghost Stories - You've likely included George the Bra in the party decorations. (You didn't forget to invite George, did you?) If you managed to string him up in a way that allows you to jiggle, you can move him around and let him tell a story once in a while. (This would be a good use for a voice changing mic on a karaoke machine for sure.) His stories are short and stupid.

Random Debates - These are only featured on the website and they are truly bizarre. Prepare two unusual seats for the debaters (past clips have include a bathtub, kiddie swimming pool, rocking horses) and give each debater a topic. These are totally unrelated, random and confusing. Allow each debater to do one sentence each, back and forth, then give a closing statement after a minute or so. These are totally weird, so just go with it. Examples from past debates: scissors vs. soup, shampoo vs. orange, medicine vs. garbage.

iAct it Out - This is just another name for charades. They usually do book titles or movies.
