These ice cream cookie sandwiches aren't just the other dessert! As a frozen treat they are the way to go for any and all of your celebrations. Easy to handle for little fingers they make a very special treat for your child's birthday party. Made ahead of time and stored in the freezer these cookies with ice cream squished in the middle will be the center of attention when friends and family gather together for summertime picnics or special celebrations.
Make it easy on yourself by starting out with store-bought cookies and your favorite ice cream or go all out to make these ice cream novelties with everything homemade!
I know you can't stand any more chitter chatter so let's get this ice cream cookie sandwich party started!
Oatmeal Raisin Ice Cream Cookie Sandwiches!
Did I hear you scream?
Shh! Don't tell anyone! If there are oatmeal cookies and ice cream in my house there is no way I can resist making up these delectable ice cream treats!
They are easy enough to make to eat right away or freeze for later. Scoop out your fave ice cream, put on one oatmeal raisin cookie, place the other cookie on top and squish together! Make one at a time, eat and enjoy! Or assemble, place in a freezer safe container, freeze and serve em' up when the crowd arrives! Easy, huh?
I love French vanilla ice cream for the center, although you could also try these...
