Best Ice Cream Sundae Recipes

This is not a recipe as such, more of a guideline. Quantities are up to you.

What you'll need:-

Your favourite classic vanilla ice cream - preferably a good quality one.
A good chocolate sauce
Chopped nuts
Whipped cream
Maraschino Cherries

These look best served in tall clear parfait glasses but if you don't have any they taste just as good served in these colourful bowls

Drizzle a little chocolate sauce in the bottom of each glass or bowl. Place a scoop of ice cream on top. Drizzle a little more chocolate sauce over ice cream. Place another scoop of ice cream on top. Finally, another drizzle of chocolate sauce, some chopped nuts. Top with whipped cream and a maraschino cherry.

Mmmm, so good!

You will need:-

1 cup caster sugar
4 cups thickened cream
3 teaspoons vanilla extract
Pulp from 6 passionfruit

1. Combine half the cream with the sugar in a saucepan. Stir with a wooden spoon over low heat until sugar dissolves, about five minutes. Remove from heat and stir in remaining cream and vanilla.

2. Line loaf pan with cling wrap, allowing extra to wrap top. Pour in cream mixture. Fold over cling wrap and place in freezer for three to four hours until almost set.

3. Using a metal spoon, roughly break up the mixture. Using cling wrap, lift mixture from pan and empty into the bowl of a food processor. Process until smooth.

4. Return mixture to loaf pan. Stir in passionfruit. Cover and freeze for two or three hours until set.

Alternatively, make in your ice cream maker.

Fresh passionfruit is best always but if you live in an area where you just can't get it or it is out of season and you just must have it this Passion Fruit Concentrate from Amazon.com is a good substitute.

Invented by a Frenchman in England to honour an Australian, is the Peach Melba the ultimate international dish? This classic dessert was created to honour Australian opera singer, soprano Dame Nellie Melba. In 1892 she was performing in Wagner's Lohengrin at Covent Garden. Afterwards, the Duke of Orleans held a dinner party at the Savoy Hotel, London in her honour and to celebrate her success. It was apparently here that his chef, Auguste Escoffier created this now well-known dessert which features two fruits synonymous with summer, peaches and raspberries.

Peach Melba by Nigella Lawson

Ingredients

Peaches:

* 750ml water
* 700g caster sugar
* juice of 1/2 lemon
* 1 vanilla pod, split lengthways
* 8 peaches

Raspberry sauce:

* 375g raspberries
* 25g icing sugar
* juice of 1/2 lemon

To serve

* 1 large tub vanilla ice cream
