Tea: House Wine of the South
I've been drinking Iced Tea since I was a small child and, yes, like all southerners, I drink it year round, not just when summer is searing, but when the snow flies, too. In the summertime, I keep a pitcher of sweetea in the fridge all the time.
In the South we call it Sweetea (Sweet Tea).
Nothing beats a frosty glass of home-brewed iced tea.

For the true tea lover
Healthy Iced Sweet Tea Recipe
(Southern Sweetea)
This is my healthy iced sweetea recipe. Would work for hot tea also if you leave out the ice.2 cups of filtered water or spring water
heat on medium in a stainless steel or glass pot
add 1/8 cup Organic maple syrup (365 from Whole Foods is good) grade B (unprocessed)
stir gently while heating to completely dissolve the syrup into the water
add 4 Tetley tea bags
cover and remove from heat
let sit 15 minutes or so
pour into tall heavy glass (never plastic) filled with ice cubes
This will be very strong, dilute to taste with filtered water
Add slice of lemon (squeeze into tea)
Enjoy with a good book outside under a tree!!

In Iced Tea, author Fred Thompson serves up 50 vibrant variations on "the house wine of the South," using black, green, and oolong teas ("considered by some to be the Lafite Rothschild of teas") as well as tisanes, which are teas made not from tea leaves but from flowers, herbs, and spices. Recipes range from Southern-Style Iced Tea--a basic formula of tea, water, and sugar--to Teatotaler's Sangria, which combines chilled green tea with peaches, oranges, and other fresh fruits. Other notable concoctions include the tropically tinged Bimini Island Iced Tea; Cha Yen, or Thai Iced Tea, which uses condensed and evaporated milk; and the classic Sweet Tea, whose main ingredient is sugar--and lots of it. ("A visitor to the South once said that it made his teeth hurt," writes the author.) There's also a section of mixed alcoholic drinks.

Thai Iced Tea
An exotic choice for a summer thirst quencher, Thai iced tea is as refreshing as it is unusual. It begins with aromatic Jasmine tea, plenty of sugar, and a liberal shot of light cream which, when poured in, turns the drink a distinctive orange color. This Southeast Asian specialty, though satisfying on its own -- the drink is almost over-whelmingly sweet but delightfully floral -- is the perfect complement to spicy Panang coconut curry or a stir-fry with prik pao, a roasted chili paste sauce.

More and more people are turning to tea as their primary hot beverage, and connoisseurs are discovering the wondrous range of flavors to be found in different varieties from around the globe-some of which command fantastic prices and are in great demand.

Making Sun Tea
Fill a clear glass jar or jug with water, the amount depending on how much tea you want to make. Select your tea - either bags or loose tea. Four tea bags or 4 tsp. tea will make 4 c. of sun tea.
Use a jar with a lid or cover with wax paper and secure with a rubber band. Place the jar outside in the sun. You don't have to set the jar of water with tea bags outside. You can put it near a window that gets the morning sun.
In an hour, check the tea's strength and color. If you used loose tea without a container, strain the tea.
If you leave tea bags in the water too long, the tea will be bitter. I prefer Luzianne Tea for Iced Tea. Lipton has a bit of a bitter taste and Tetley doesn't seem to have much taste. Sometimes I make sun tea with various herbal teas. You can put in a few sprigs of fresh mint as well.

- I am English so say no more! I love tea and drink it every day.
It did take me awhile to get used to iced tea but now I enjoy it just as much as hot tea.

- Great work! I drink Iced Tea year round, too, but I don't make it myself all that much. When I do, I use Black Tea which makes a pretty good iced tea. If it's hot, I have to drink it black with no sugar.
