Decorate Cakes and Cookies with Icing Flowers

Enjoy the creative challenge of making edible flowers with different kinds of icing. I have gathered together basic recipes, videos, books and tutorials to help you get started or add to your existing skills. And if you don't want to make your own you can order flowers already made waiting to be added to your cake or cookie.

I'm purely an amateur but I have been fascinated with cake decorating since I was a girl. I was the chief birthday cake maker in my family for many years until I went to college. My creations weren't professional as I valued taste (buttercream) over visuals, but I still managed to make something special.

Buttercream Icing Recipes

Wilton's Buttercream Icing
This is the tried and true icing recipe I've used for years. It uses half butter, half shortening. The shortening gives it the stiffness you need for flowers to hold their shape.
Martha Stewart's Basic Buttercream Recipe
This one uses 3 sticks of unsalted butter. Should hold up pretty well as long as your working in a cool environment and keeping the cake cool. It no doubt tastes fantastic.
French Buttercream Recipe
French buttercream seems to be the marriage of royal icing and buttercream icing. It has both egg whites (and a lot of them) and butter. Honestly I'd leave this to the experts, although I've seen Martha Stewart make some beautiful soft flowers with this.

Royal Icing Recipes


Royal icing provides sharper and cleaner shapes than buttercream frosting, but it is egg white based so it doesn't have the same buttery flavor. Flowers can be made ahead and dried. It dries so well, in fact, that you have to keep the bowl covered with a wet towel while working to keep it from drying out.

Royal icing can also be used to outline and then fill shapes.

You have to be careful not to use regular eggs in order to prevent salmonella. Meringue powder is a nice alternative.

    I think I'd rather adore them and splurge on rare occasions and eat them versus learn how to make them. Very pretty though! :)
