Three Bears Bento

Fried Rice, Broccoli and Carrots with Ranch Dressing

Did you know that there is a wonderful delicacy in those broccoli stems you always throw away? Or now maybe you buy them already trimmed off and thrown away! But if you trim away the tough outer part of the stem on your broccoli, the "heart" is wonderful. It's mild flavored, tender and great for dipping. Also, the part of the stem at the bottom of the "branches" is really yummy. Slice it thin and you can make Broccoli Bears. I just cut three slices near the bottom of the branches, and cut out nori eyes and snouts. I really needed a paper punch but didn't have just the right one.

American Fried Rice

Long grain and wild rice (unflavored), cooked according to directions

Saute in 2 Tablespoons of Olive Oil
Begin with slowest cooking vegetables, add others as you go
Sliced Green Onion
Bell Pepper
Carrot, thinly sliced
Corn (I use frozen)
English Peas (same as above)

When vegetables are done, remove to a plate.
Add to saute pan
1 pkg. extra firm tofu, drained and cubed
2 Tablespoons soy sauce
1 Tablespoon Olive Oil
Saute until beginning to get a few crusty parts (yum!). Remove to a plate. I usually wash the pan out about this time, I never use non stick pans. If I don't wash the pan all my egg ends up cooked onto the bottom.

1 Tablespoon Olive Oil
2 eggs
Add oil and break eggs into the warming pan. Very gently scramble eggs adding a teaspoon (or more!) of soy sauce. When eggs are cooked add all ingredients back into pan to warm adding more soy sauce to taste. This dish is so yummy and easy anyone can make it, and the big plus for me...ALL the boys like it!
