Imitation Crab Salad Recipe
Ingredients:
1/2 pound imitation crab-chopped and shredded
1/2 cup finely-chopped celery
1/4 cup finely-chopped sweet onion
1/4 cup finely-chopped dill pickle
1 Tablespoon sweet pickle relish
1/2 teaspoon dill weed
1/4 cup mayonnaise or to taste
1/2 teaspoon yellow mustard
1 Tablespoon chopped chives
salt and pepper to taste
Preparation:
Simply mix the imitation crab, sweet onion, celery, dill pickle, sweet pickle relish, dill weed, mayonnaise, mustard, and chives until well combined. Salt and pepper to taste. Chill thoroughly.
Serve as a salad topper, sandwich spread, chunky dip, or appetizer cracker topper.

Imitation Crab and Pasta Casserole Recipe
Ingredients
8 ounces uncooked spiral pasta
2 large onions, chopped
1/2 pound fresh mushrooms, sliced
1/2 cup chopped green pepper
2 garlic cloves, minced
1/2 cup butter
2 packages (8 ounces each) imitation crab meat, chopped
1/2 cup sour cream
1-1/2 cup (6 ounces) shredded cheddar cheese
Directions
* Cook the pasta according to directions on package. Meanwhile, in a skillet, saute onions, mushrooms, green pepper and garlic in butter until crisp-tender. Remove from the heat. Drain pasta; add to vegetable mixture. Stir in the crab, sour cream, salt and basil.
* Transfer to two greased 8-in. square baking dishes. Sprinkle with the shredded cheese. Cover and bake the casseroles at 350° for 20 minutes. Uncover and bake 5 minutes more.

Imitation Crab Quiche Recipe
Ingredients:
8 ounce imitation crab
9" pie crust
3 large eggs, beaten
1/4 c. half & half
1 1/2 teaspoon Worcestershire sauce
1 teaspoon prepared mustard
2 dashes warm sauce or possibly to taste
1/2 grated Swiss cheese
1/2 c. grated Gruyere cheese
Directions
*Mince imitation crab in food processor. Deposit all the ingredients in a bowl and mix well. Pour into the pie crust. Bake in oven at 400 degrees for 40-45 min (or until knife inserted near center comes clean). Let cool for 15 min.Serves 4-6.

Nutritionally, imitation crab has a bit less protein and potassium and much more sodium than genuine crab. However, the imitation version has less cholesterol and carbohydrates than real crab.
