Indian Food (Cuisine) has now become very popular worldwide. You can find find Indian restaurants in almost every city in the world. London itself has hundreds of Indian Food and Curry Restaurants.

Millions of Indians now reside outside of India and are sharing their culture, taste and love of Indian cooking everywhere they go. Foreigners are now becoming increasingly aware of the delights of Indian cuisine and are developing a fondness for Indian food with all the spices, ingredients and curries that are so easily available to them. It is said that in the UK, people are now eating more curries than the traditional fish and chips.

Indian food has come out of the traditional Indian kitchen and is now a mainstream cuisine that is enjoyed worldwide.

Preparing Indian Ffod in your home is not a very difficult thing. All you need is a good Indian recipe book and the right ingredients. Every city have several stores that carry unique Indian spices. It is not difficult at all to find all the recipes at several places in every city.

Indian cuisine has a myriad of selection. Every region of India have their own cooking styles, spices and recipes that make them truly unique. One thing can be said of Indian food is that it is the most flavorful of all food. Indian recipes in the northern region are cooked and prepared differently than in the south. So in the big country that is India, there are over 1,000 recipes that can be found.

People in the coastal region prepare the famous seafood dishes such as prawn vindaloos, fish curries and kormas. In the north they prefer to eat more chicken and mutton. Tandoori chicken, tikkas, kebabs and butter chicken are more of a north Indian dish.

Indian food uses a myriad of chillies and spices. Different regions of India uses them differently and in different amounts in their food. Spices such as cumin, paprika, turmeric, coriander, ginger and garlic are just some of the spices that are used everyday in Indian recipes.

Indian Food also uses a lot of butter and ghee (treated fat) in their cooking. They believe that the more butter, milk, yoghurt and ghee used makes the food taste better.

As there are millions of vegetarians in India, they are hundreds of vegetarian recipes for them. Aloo Gobi, Bangan curry, Daal and paneer are just a few to name.

Indian breads have also become very popular with foreigners. Naan, Rotis and Puris are essential in a Indian diet. Indians eat their curries and soups with these breads. They are tasty and definitely filling.

I live in Bangkok and in the past several years have noticed over 200 hundred Indian restaurants here. Most of them prepare traditional north Indian recipes but there are several restaurants that also prepare south indian favorites such as idli, sambar, vara and dosas.<

Indian spices and chillies also has several health benefits. Everybody should try to cook and eat Indian food more often to help in better circulation of the blood and heart. Just take it easy on the butter and oils. :)

Lamb Korma Recipe

Korma = any meat or vegetable made into a ball shape

Ingredients :

2 tablespoons ghee or oil
1 onion, sliced
700 g mutton
2 green cardamoms
2 black cardamom pods
2 bay leaves
4 cloves
1 cinnamon stick
1 teaspoon garlic paste
1 teaspoon ginger paste
3-4 teaspoons yogurt
2 teaspoons coriander powder
1 teaspoon red chili powder
1 pinch black pepper
salt to taste
1 cup chicken stock or water
6-7 saffron strands, soaked
2 tablespoons cream (optional)

Directions :

Heat ghee in a deep pan over medium heat.

Add green cardamoms, black cardamoms, bay leaves, cloves, cinnamon stick and sauté.

Add the finely sliced onions and sauté till they are transparent. Reduce the heat, add the ginger garlic paste and stir well.

Add the lamb, stirring constantly till it changes colour.

Add yoghurt, coriander powder, red chili powder and cook till oil starts separating.

Add some salt, then chicken stock or water and bring to a boil. Cover and cook on a slow fire till done.

Mix in black pepper powder,saffron.

Garnish with thin deep fried onion rings, cream and serve hot.

Aloo Gobi Recipe

Vegetarian Dish

Ingredients :

1 cauliflower
2 potatoes, boiled & peeled
1 tbsp coriander, finely chopped
1 green chillies
1 onion, finely chopped
¼ tsp turmeric powder
½ tsp dhania powder
1 tsp lemon juice
2 tbsp curds
½ tsp cumin seeds
3 tbsp oil or ghee

To be ground into paste :

2 tbsp coconut, grated
¼ cup coriander, chopped
3 green chillies
½ tsp ginger grated
1 tsp garlic grated
1 onion
½ tsp wheat flour

Method :

Break cauliflower into florettes. Simmer in boiling water for 3 to 4 minutes.

Drain, keep aside. Chop potatoes into medium chunks.

Heat oil in a pan, add cumin seeds, allow to splutter.

Add onion and green chilli, saute till pink.

Add paste, turmeric powder, dhania powder, saute for 2-3 minutes.

Add curds, stir continuously, till boiling resumes.

Add potatoes, cauliflower, cook till gravy thickens.

Stir occasionally to avoid burning.

When gravy is thick and oil separates, add lemon juice and it is done .

Garnish with coriander, serve hot.

Things You Must Know About Indian Curries and Spices

Masala BoxThe tradition of Indian cooking and curries dates back to over 5,000 years. The word "kari" or as the English calls curry, is a Tamil word (South Indian language) which means vegetables cooked in spices. A curry is a gravy that is cooked with seasonings and spices and flavored with with different tastes.

Indian curries combine several textures, flavors and pungency which are unique in different regions and dishes. India, being a vast country that it is, has developed different cooking styles in each region each with its own spices and seasoning. A common factor in all the regional styles of cooking curry is the marination process and slow cooking which ensures the flavor and color of herbs and spices to meat, fish and vegetables.

Indian curries are cooked using a lot of spices. Indian spices consists of items such as aromatic dried bark, fruits, seeds, plants, berries, roots, and buds. Heating such spices bring out the flavor and aroma in them and in the curries.

Garam Masala is a popular spice blend that is used in several Indian curries and dishes. Good and authentic Indian curry dishes often combine blends of the following spices - coriander, turmeric, cloves, ginger, red and black pepper along with other spices. Garam Masala is a major spice blend of Indian cookery where each home has its own spice blends. It is often added towards the end of the recipe.

Masala or the blend of various spices is often cooked in hot oil to release the natural flavors and oils of the spices and remove any raw taste it carries. The process of cooking Masala in hot oil is called Bhuna. Bhuna literally means "fry in oil" which is an important process in cooking a perfect Indian curry.

Indian cooking also includes the process of frying whole spices and is a technique used for the same reasons as Bhuna, to cook out the raw taste from the spices. This process is called Tadka or Bargar. The spices are added whole to the hot frying oil. The spices are considered cooked the moment they color and start to float.
