Vegetarian Pie -- Indian Style
I am sharing the recipe that my Mom uses to make her yummy vegetarian pie. I hope you all enjoy it.
Indian Style Vegetable Pie
- Serves: 4 - 5
- Total Time: 45 minutes
This is a great pie recipe that anyone can use. You can change the vegetables that you want to become the filling depending on what you may have available in the veg garden or the kitchen.
Ingredients
- 2 cups of Plain Flour
- 100 grams of cold butter or chilled butter
- 1/4 cup diced cottage cheese (paneer)
- 1/4 cup boiled potatoes (sliced into small cubes)
- 100 grams Spinach leaves (palak)
- 150 grams Cauliflower (cut into small pieces)
- 100 grams carrots (sliced into small cubes)
- 100 grams peas
- 2 small onions (sliced thinly)
- 1 medium tomato (chopped finely)
- 1 sliver of ginger (about 1inch long)
- 1 green chili (or more)
- 1 tablespoon Olive oil (or any other cooking oil)
- 1 tablespoon cream
- 1 teaspoon cornflour
- 1/2 teaspoon garam masala
- 1/4 teaspoon turmeric powder
- salt to taste
- some cold water
Instructions
For the pie crust:
Use a sieve and mix flour with about 1/2 teaspoon of salt. Cut the chilled butter into small pieces and add to the flour and salt. Use a fork and mix it until the texture is crumbly. Sprinkle some cold water over it and mix the dough lightly with your hands until it all comes together to form a lump. Avoid kneading it too much as the butter may melt quickly because of the heat of your hands. Place the dough in a bag and place in the refrigerator for about 15 minutes.
After 15 minutes,divide the dough into two and roll out the dough into rounds of less than 1/4 of an inch thick. Set aside one round and place the other one over a greased pie plate. Use a fork to prick it lightly all over. Bake it in an oven at 190*C for about 15 minutes or until the color turns into a lovely light brown.
For the pie filling:
Heat oil in a skillet and saute onions until translucent, add the tomato. Add the turmeric. Add the vegetables and some salt to taste. . Add about 3/4 cup of water to soften the vegetables. Add the boiled potatoes and the garam masala. Stir and allow to simmer for about 5-7 minutes. Add the diced cottage cheese (paneer). Stir and allow to cook for 2 - 3 minutes. The filling must not have liquid in it.
For assembling the pie:
Put the cooked filling into the crust. cover with rolled out dough for the upper crust and seal it very well. Bake at 190C for 15 - 20 minutes or until the upper crust is brown.

Some Tips:
If you have any extra filling, you can keep them refrigerated and they can keep for a day or two. They can be used as sandwich filling or you can make vegetable fritters out of them.
