Inside Out Crab Cake Ingredient List

• 1 Red Bell Pepper, diced
  
  1 Spanish Oion, diced
  
  1/2 lb Butter
  
  1 Cup All-Purpose Four
  
  1 b. jumbo lump crab meat
  
  Pinch salt
  
  Pinch pepper
  
  Pinch fresh Italian parsley minced
  
  25 Ritz Crackers, hand crumbled
  
  1 tablespoon Dijon mustard
  
  1 cup extra virgin olive oil

Instructions

1. Saute in skillet red bell pepper and onion with butter on high heat until caramelized.
2. Add flour and whisk together with carmelized ingredients.
3. Add to carmelized mixture jumbo lump crab meat and a pinch of salt, pepper, and parsley and gently fold together as to not break up crabmeat.
4. Place into a bowl or container and refrigerate for about 1 hour or until cool.
5. Place refrigerated mixture into mixing bowl and add Ritz crackers and Dijon mustard.
6. Form mixture into crab cakes.
7. Heat extra virgin olive oil in skillet on high heat and add crab cakes.
8. Pan-fry on each side until golden brown.
9. Place crab akes on hot plate to finish off and bake in over for 3-5 minutes at 450 degrees
10. Toss spring mix salad for garnish
