I search for recipes easy to cook. I am sure you do too.
I am health conscious and if I can get home cooked food that does not require me to spend a lot of time in the kitchen, I am all for it :)
Indian food have healthy nutrients researched by ancient food lovers and passed on from one generation to the next.
Each ingredient in a recipe compliments the strengths of the other ingredients as well as nullifies the effects of their bad side effects.
For example, Dosa, the Indian pancake, has white lentil as one of the ingredients. This white lentil called 'urad dal' is rich in proteins and very good to boost up your hemoglobin count. But it has a side effect. It leads to 'stomach gas'.
So Indians use other ingredients such as asafoetida (hing), cumin seeds and cooking soda to nullify this effect of the whilte lentil. These ingredients not only help us overcome the bad effects of 'dal' but also complements the nutritional value by their own strengths.

1.Prepare the dosa batter - Take two table spoons of instant dosa mix, add four table spoons of water and your dosa batter is ready.
2. Make a circular shape on a flat pan. Add two tea spoons of oil and cook for a minute over medium heat.
3. Take a spatula and life the edge to check. When cooked the lower part of the dosa turns golden brown. Fold and fip. Cook the other side for 30 seconds more.

Instant Porridge

This is my mother, who has about 60 years of experience in cooking rare recipes. She is passionate about cooking and loves to feed all who come in contact with her.I do not like to spend a lot of time in the kitchen, so she couriers me packets of ready-mix that can be prepared in minutes. Many of them I can eat without even cooking. Her creations save me hours of time and they taste just as good as the ones prepared through hours of labour.
The instant dosa mix and the other recipes are her creations.
Here is an easy to prepare dessert recipe.
This Indian dessert can be prepared in minutes. No elaborate preparations are needed. This porridge is made out of chickpea flour and milk. Of course you need to add sugar and butter. (In India we use clarified butter and we call it ghee).
Easy to Make Porridge
First you need to take a pan, add a spoonfull of butter or clarified butter and roast the chickpea powder. Then add milk and sugar. Let it boil for five minutes. Instant porridge is ready. To make the porridge taste better you can garnish it.
Garnishing
For all porridges, the garnishing is usually the same. You garnish the porridge with cashew nuts, almonds, raisins, cardamom and saffron. You can leave out one or two of the ingredients, if you like.
You need to remove the skin of the cardamom and powder the black granules inside. Take the saffron, add two drops of milk and mash it to a paste.
Take a spoonfull of clarified butter and cashew nut in a pan. Roast the cashew nuts till they turn golden brown. Remove them on a plate. Roast the almond in the same ghee (butter). Remove the almonds on a plate and keep aside.
Start With Garnishing and Prepare Porridge
You can prepare the garnishing first and then use the same butter for roasting the chickpea powder.
After removing the almonds, you can roast the chickpea powder in the same butter. Then add milk and mix well. Ensure no lumps are formed. Add sugar and let the mixture boil for five minutes. Add the powdered cardamom and the saffron paste. Serve the porridge in a bowl or cup and sprinkle the cashew nuts and almonds on top. You can serve it hot.

Milk 500 gms
Chickpea Powder (bengal gram) 2 Table Spoons
Sugar 150 gms
Clarified butter (ghee or plain butter) 3 Table Spoons
Garnishing
Ingredients
Cashew Nut 25 gms
Almond 25 gms
Raisin 25 gms
Cardamom 10 gms
Saffron 0.10 gms (three strands)
