A Little About St. Patrick's Day

Dancing KiwisDancing KiwisDancing KiwisDancing Kiwis
The first public celebration of Saint Patrick's Day in America was in Boston, Massachusetts in 1737. The holiday is celebrated by wearing green clothing and anything Irish. It doesn't matter what ethnicity you are, everyone can be "Irish for a day." As everyone knows, alcohol plays a large role in St. Patrick's Day celebrations...just go into any major U.S. city on March 17 and you'll see for yourself!

Now just who is St. Patrick? He's believed to have driven the snakes out of Ireland, and for that he is honored today. March 17 is believed to be the date of his death.

Guinness Beef Stew

A classic recipe for St. Patrick's Day

This recipe is outstanding and has been taste tested! Try it out for this St. Patrick's Day. It's really a keeper for any time of the year. Make it a couple of days ahead to enhance the flavor even more. Also, use good quality wine. The wine flavor really shines through, so the cheap stuff will only make the stew taste just that...cheap. A good Cabernet Sauvignon or Red Zinfandel is a good choice.

Irish Soda Bread -- a Classic Bread for Tea & Coffee

Dancing KiwisDancing KiwisDancing KiwisDancing Kiwis

No St. Patrick's Day is complete without a piece of Irish Soda Bread. The dry consistency is great with a cup of tea or coffee.

  • Shortening

  • 2 cups all purpose flour

  • 6 tablespoons sugar, divided

  • 1 1/2 teaspoons baking powder

  • 1 teaspoon salt

  • 3/4 teaspoon baking soda

  • 1 cup buttermilk

  • 4 tablespoons butter, softened
  • 2/3 cup raisins

  • 1 teaspoon caraway seeds

  • Preheat oven to 375°F. Grease 8-inch-diameter cake pan with shortening. Whisk baking powder, 5 tablespoons sugar, flour, salt, caraway seeds and baking soda in large bowl. Add butter. Make well in center of flour mixture. Add buttermilk. Gradually stir dry ingredients into milk to blend. Mix in raisins.

Using floured surface, shape dough into a ball. Transfer it to prepared pan and push down slightly(the dough will not fill the pan entirely). Sprinkle dough with remaining 1 tbsp. sugar.

Bake bread until brown and toothpick is removed clean, about 35-45 minutes. Cool bread in pan 10 minutes. Transfer to rack. For best cutting, serve at room temp. Freezing not recommended.

Celtic Symbols

The meanings of Celtic symbols are a bit sketchy. There isn't much information recorded on what exactly each symbol means, so it's largely up to the interpretation from authorities and historians of old Celtic culture. This leaves the meaning largely into anyone's hands. It can mean anything to anyone, and because of that, it's a hugely popular group of symbols.

Trinity Knot

No doubt the most recognized artwork in Celtic history is the Celtic "trinity" knots.
There is little known about trinity knots and their origin, however, they have been linked back to around the 400's A.D.

The Celtic knot symbol is said to have represented a perpetual loop, or knot, of life; the birth-life cycle, looping over and over. This symbol has been used as charms to ward off sickness, and presented as gifts for loved ones. The Celtic knot has been in use for over 1500 years!
