The Israeli salad is simple, healthy, and tasty. This type of raw salad is found in home kitchens, youth hostels, falafel stands, and five-star hotels across the country. In the past, it was an essential part of an unprocessed Israeli breakfast, but is also delicious with lunch or dinner.

Ingredients for your delicious raw salad 

Main Ingredients:

Tomatoes are the foundation of this salad. I recommend experimenting with all kinds, including regular ripe ones and even cherry tomatoes for an extra tangy taste. Tomatoes qualify as one of the world's healthiest foods according to the WHFoods.com website.

Use standard white onions or red onions. Onions are also considered a very healthy food. Also, you can add some scallions if you feel like it.

Olive Oil is great with this salad. It makes the whole salad come together. Extra virgin olive oil is the best choice and ranks well in the WHfoods list.

Optional Ingredients:

Parsley
Green Onion (Scallions)
Bell Peppers (Green, Red, Orange, or Yellow)
Lemon Juice
Salt/ Pepper

7 Easy Steps to Creating a Tasty Israeli Salad

1. Gather your vegetables
2. Wash the veggies and peel the cucumbers
3. Slice and dice them on a cutting board
4. Remove and throw away the ugly parts (e.g. top of tomatoes, inner cores of bell peppers)
5. Combine the veggies in a salad bowl and mix with a ladle or big spoon
6. Add olive oil and/or lemon juice, salt, pepper
7. Serve and enjoy!

Salads and Cancer Prevention 

Dr. David Servan-Schrieber has a new book out about preventing cancer with lifestyle choices. The book is called "Anticancer" and it comes out in English in the autumn of 2008. Here are some interesting tidbits that relate to making salad:


  1. Cucumbers and bell peppers are sprayed with a lot of pesticides. I get the impression from the book that the benefit of eating veggies with pesticides is greater than not eating them, but I still think it's better to eat them organic if possible.


  2. Green onions (a.k.a. scallions) are listed as one one of the most potent vegetables against individual colon, brain, lung, prostate, and breast cancer cells.
