My Italian Tomato Pie

Although a recipe is meant to be treasured, it is also meant to be shared. I began making this pie about fifteen years ago with the spouse in mind. The Italian Tomato Pie is easy to assemble, economical to make, and the results are delicious

The pie is made with fresh garden tomatoes, onion, and green pepper. Everyone I know who has tried it, loves it.

My Italian Tomato Pie Recipe

The Crust

You can use any type of regular pie crust your heart desires, and achieve delicious results. Sometimes I make my crust from scratch, other times I purchase the refrigerator crust, and sometimes I buy a crust mix. Jiffy Mix has been around a very long time, and their box crust mix is affordable and bakes up beautifully, as do other products.

For true vegans, there are gluten free pie crust mixes and parmesan products that that work well, too.

Italian Tomatoe Pie - The Last PieceMy variation of the tomato pie recipe was pretty good, but when a friend stopped over and ate almost an entire pie (left one piece), that pretty much confirmed it. I had to laugh when he told me that I "found the way to a man's heart."

    I've never had a tomato pie, but it does look and sound yummy. I'm going to bookmark this so I can make it once it cools down enough to use the oven. I'm looking forward to eating it.

    I've never heard of it, but it sounds interesting! I probably would not use that much onion, though. Great recipe!

    I've never had a tomato pie and this one looks delicious! Will be making it very soon. Have all of the ingredients except the pie crust.
