Serrano Jamon of Spain

As the world closes in and we become more aware of different cultures and product availability, some of you may have heard of Serrano Ham, the famous cured jamon from Spain. Most people are familiar with Italian Prosciutto, but the Serrano Ham is cured longer for a richer flavor. Even the Italians are starting to develop reserve hams they are curing longer to bring out the flavor people are starting to appreciate.

Traditionally, Serrano ham is often thinly sliced and paired with Manchego cheese and fragrant olive oil for a tapas dish. It can be used in cooking, or if you enter a Spanish kitchen, you might see the whole bone-in ham displayed proudly on a stand with a special knife nearby for carefully slicing paper thin sheets for a plate.

Some of the brands are saltier than others, but most have a delicate taste with a much purer ham flavor than prosciutto. The Pata Negra, so called "black hoof" Iberico ham, is the most sought after and difficult to obtain outside of Spain. I have tasted it myself on a recent trip to Spain. The ham is delicate and never tough, it almost melts on your palate and has even a sweetness to the flavor. Not readily available in the U.S., in the meantime, I easily console myself with the bone-in ham from La Tienda.

Popular brands of Jamon Serrano

Like most foods, there are some sentimental favorites and those that are actually better than others. Think Chevy vs. Ford in automobile brand recognition. The real difference becomes more apparent when comparing the white pig to the more prized black Iberian pigs.

  • Fermin - both mountain Serrano and acorn fed Iberico hams
  • Campofrio - excellent value and readily available at most online or brick and mortar stores selling other brands of Serrano

Recipe for Serrano Sandwich - Simple flavors are usually the best

Recipe Spanish style - Serrano ham, tomato, olive oil and fresh bread = nom, nom

Probably one of the most delightful recipes you will ever have with Spanish Jamon is simple and showcases the flavors beautifully.

Slice Serrano ham thinly for a sandwich. Slice a bagguette or other fresh bread in half, drizzle with a good quality Spanish olive oil and rub with the inside of a fresh roma tomato. Be sure and squeeze the tomato so that plenty of juice and tomato bits are left attached to the soft bread insides.

Layer the Serrano Jamon in folds and close the bread for a simple snack or light lunch. The flavors all complement each other to highlight the star of the show... Serrano Jamon.

    I love Serrano ham but I can never get my own leg and cut it. I am useless at the carving. Therefore I get it done in the delis and the finer the better of course.
