Jap Chae (Chap Chae)

Jap Chae or Chap Chae literally means mixed vegetables. There are two version of jap chae: one is without noddles and one is with noodles. Basically this dish is stir-fry sweet potato noodle ( dang myeon) with some vegetables such as spinach, carrot, mushroom and sometime sliced beef is added. Soy sauce and sesame oil is the main flavoring sauce.

Sweet potato noodle is giving a nice springy and chewy bites into Jap Chae. Soy sauce and sugar give umami factor. Sweet, salty and crunchiness of sesame seed give extra flavor. Here is simple recipe of Jap Chae. Enjoy.
