Here are the ingredients for the Japanese mayo!

Step 1. Mix the eggs

Place the yolks in a cylindrical container that can hold 1L

Step 2. Make vinegar solution

Mix the ½ of the vinegar, yuzu juice, sea salt, Japanese mustard, dashi powder and sugar.

Step 3. Mix egg yolks and vinegar; then some oil

Mix everything well; then put some oil. You need to keep on stirring so that the oil can be emulsified completely.

Tired of stirring everything up? You can always use a stick blender to make your life easier!

Step 4. Add the remaining vinegar

Once the oil is gone, add the remaining vinegar. Now stir in the hot water until you achieve the right consistency.

Important!

This mayonnaise can keep for 1-2 weeks in a fridge!

Put it in the fridge for at least an hour to let the flavor develop! This mayonnaise can only survive for 1-2 weeks so eat it while you can!

Simpler Japanese Mayo Recipe

Keep it short and simple!

I just found a simpler recipe here. It may not be as good as the original recipe, but it can suffice!

Get a chunk of mayonnaise, and add rice vinegar, mustard, and corn syrup (equal proportions). And, that's it!

Japanese SaladHere's a Japanese salad that I did back when we had a lot of Kewpie Mayonnaise! Easy salad, easy recipe, try to make this one!

Ingredients:
Some fresh carrots and cucumber, julliened
Stripes of ripe mango
Crab stick strips, straight from the fridge
Japanese Mayonnaise
Some drops of Sesame Oil
Salt and Pepper

The measurements are up to you! I normally put a LOT of crab stick strips and Japanese mayonnaise.

    I'm not sure if I've tasted it, but I have eaten in Japanese Restaurants, so I must have. Your recipe sounds delicious. I 've never tried making mayonnaise, but I might start with this one.
