Easy Jello Fruit Pies

Delightful, and healthy, cool summer desserts!

Ooh how I love strawberries! But you can only have so many strawberry smoothies in a summer. (Or can you?) What else to do with them? Put them in a pie - a Jello pie!

This recipe is one of my many altered recipes. Sometimes the original recipe I get is too sweet, crunchy, or expensive for my taste. So I change it.

Below you'll find my version of a great Jello pie, but don't take my word for it. If you need more sugar, add it. If you want different fruit, add it! Have fun with your tasty treat.

Supplies you'll need 

Making these pies is very simple, and you don't really need any special tools.
  • Large mixing bowl
  • Small saucepan
  • Coring knife
  • Whisk
  • 1/4 measuring cup
  • 1 cup measuring cup
  • Stove

Ingredients for pie 

There are very few ingredients for these fruit pies, and you can make them any time of year! Just choose your fruit ingredients based on what's available and what you're in the mood for.
  • 1 - 9" frozen pastry pie shell
  • 1 box Jello mix
  • 1/4 cup sugar
  • 1 1/4 cups water
  • 2-3 cups fruit

Which Jello flavor will you use? 

Before you make your pie, decide which flavor of Jello you'd like to use.

  • Mixed Fruit
  • Strawberry

  • Peach

Which fruits will you use? 

I'm a big fan of unique fruit combinations for these pies! You can use just about any fruit except pineapple. Fresh berries, bananas, grapes, kiwis, and peaches work best, while if you're going with pears, mandarin oranges, or mixed fruit, the canned stuff works best.
  • Strawberries, blueberries, raspberries, blackberries (fresh)
  • Cherries (fresh, pitted bing)
  • Kiwi (fresh)
  • Bananas (fresh)
  • Pears (canned, thoroughly drained)
  • Peaches (fresh)
  • Mandarin oranges (canned, thoroughly drained)

Directions 

Since both your pie crusts and Jello mixture need to cool before putting the pies together, you can make those before preparing your fruit.
  • To prepare the pie crusts: bake at 400^F for ten minutes, or as otherwise directed on the package. If you have room, these can be placed in the refrigerator or freezer to cool.
  • To prepare the Jello: boil 1 1/4 cups water. Whisk in 1/4 cup sugar and one box Jello flavoring. Set aside in the fridge or freezer to cool.
  • To prepare your fruit: if you're using strawberries you can make a traditional strawberry pie that uses whole cored strawberries. I prefer to cut my strawberries and other fruit into small bits to get as much healthy, and tasty, fruit per bite as possible.
  • To put your pie together: layer your fruit in the cooled pie crust until it is level with the rim of the crust. Pour the cooled Jello mixture into the pie crust until it meets the bottom edge of the crust rim. Place it in the refrigerator or freezer (temporarily, then move to fridge) to cool for about two hours.
  • To enjoy: add ice cream, Cool Whip, Rediwhip, or enjoy plain!
