Fiery Hot Jamaican Jerk Chicken Recipe

Jamaican jerk chicken is a dish that lots of people make, but so often using a ready made, shop bought, jerk chicken marinade.
Not that there's anything wrong with that, some of the Jamaican jerk marinades you can buy are really very good, but nothing can beat a homemade marinade for a really authentic jerk chicken flavour.
Jerk chicken marinade is easy to make at home and the flavours are amazing, so why not try my fiery hot Jamaican jerk chicken; it's really worth the 15 minutes extra work, which is all that it'll take to make your own marinade.

Ingredients To Make The Fiery Jerk Chicken Marinade

2 tsp cinnamon powder
2tsp grated nutmeg
2tsp ginger powder
2tsp dried thyme
2tsp allspice
2tsp hot chilli powder
2 peeled garlic cloves
5 cm piece of peeled fresh ginger roughly chopped
1tbs soft brown sugar
60ml lime juice (bottled is fine)
60ml dark soy sauce
100ml cider or wine vinegar
1 quartered peeled onion

2 fresh chillies. Use your favourite; red or green, bird eye, scotch bonnet - as long as they're hot!

60ml dark Jamaican rum. Worth investing in just for this dish, but if you don't have any, you can try brandy, sherry or white rum

How To Make The Fiery Hot Jamaican Jerk Chicken Marinade...

It's as easy as this....
Put all of the ingredients above into a food processor and blitz to a thickish paste.

To Make Enough Jerk Chicken For 4 Servings You Will Also Need

4 chicken breasts, without skin, with or without bone. I've also used a boneless breast fillet, ready prepared for the oven and sold in a disposable roasting tray.

How To Make The Jerk Chicken

Preheat the oven to 200 degrees centigrade

Diagonally slash the chicken to about a 1cm 3 or 4 times
Put the chicken slash-side down in a dish and pour the jerk chicken marinade over. Cover and refrigerate for at least 5 hours, or, ideally overnight.

If you're using the oven ready joint, you can marinade the jerk chicken in its foil tray and then transfer to the oven. If using chicken breasts, line an oven proof dish with foil and tip the chicken breasts and the marinade in, slash side up.

Place the dish (or foil tray) in the oven and cook for 1 hour. Check the chicken half way through to make sure no excess juice needs pouring off.
