Beef jerky has been around much longer than you and me. Although it's exploded in popularity with low-carb diets, jerky has been a staple of American cuisine forever. Lewis & Clark learned how to make it on their travels, and any civilization with carnivorous tendencies has dried their meats. In fact, the word "jerky" comes from the Quechua (Incan) word ch'arki, for dried meat.

It's Healthy
The major reason beef jerky is so healthy is because in order to make it last a long time, the maker has to trim the fat first. Otherwise, it will go rancid quickly without additional preservatives or a lot of salt.

Since it's beef:fat ratio is high, that makes it a great source of protein, but without the carbs. It is marinated and then smoked for flavor, which is a preferred method of cooking for health conscious people.

It's Portable
Jerky is a great road trip snack, but also goes great with lunches for the kids. Without the fat and water, jerky is extremely lightweight. In a vacuum-sealed bag, it can last a long time, although once opened it's best to eat it within 3 days.

It's Delicious
