Kaiserschmarrn - Food of Royalty
Kaiserschmarrn is literally food of royalty. It was one of the favorite food of Austrian Kaisers and as you probably guested, they named this desert after them self. Even though last Austrian Kaiser stop ruling almost 100 years ago (in 1918), Kaiserschmarrn stayed popular desert in this area of Europe. Kaiserschmarrn is soft, fluffy pancake ripped into little bites that is extremely easy to make. I prepared you a simple Kaiserschmarrn recipe that I use to make me this delicious desert.

This is basic Kaiserschmarrn recipe the way I make it. It will take you very little time and you don't need any cooking skills. With this Kaiserschmarrn recipe, you can have a taste of royalty food in your very own kitchen.
Ingredients
- 12dag / 4 oz. of flour
- 1/4 liter of milk
- 6 eggs
- 4 spoons of powdered sugar
- 2 vanilla sugars
- 2 spoons of raisins
Instructions
This Kaiserschmarrn recipe is made for 4 persons. Here at our house we all like Kaiserschmarrn a lot, that's why I always prepare it in this quantity.
1. First think we have to do is to separate whites and yolk. We put milk, flour, vanilla sugar and a pinch of salt in bowl and we mix it really good. Then we add yolk and mix it really good one more time. You have to mix it until you get smooth batter.
2. In a second bowl, we make whipped eggs. We to that by mix together white of an eggs and powder sugar. When whipped eggs are done, add them to batter gradually and mix them slowly together with egg beater of cooking spoon. In the and, we add raisins.
3. We heat up the pan and add just a little bit of butter. When pan is hot enough, we pour in batter equally over the pan (like you see in the picture). When done on one side, we turn it around for a few seconds and Kaiserschmarrn is done. Now we take cooking spoon and cut Kaiserschmarrn on small chunks (bite size).
This is it. Easy, just like I said it would be. All we have to do now is to serve it and enjoy it. You can put some powder sugar on top if you like it sweet. Traditionally people eat stewed fruit (plums or peaches) with Kaiserschmarrn. I personally, prefer a little bit of blackberry or strawberry jam.

Short history of Kaiserschmarrn
Do you know who invented Kaiserschmarrn recipe?
Kaiserschmarrn have interesting history and a lots of stories about how this dish was invented. The closest translation of word "Kaiserschmarrn" is something like "Emperor mishmash". According to history, Kaiserschmarrn was first prepared for the Francis Joseph I (1830-1916), the "Kaiser" (Emperor) of Austria.
There are several different stories, but most common version is this one. Emperor's wife, Elisabeth of Bavaria, was obsessed with maintaining a minimal waistline. She directed the royal chef to prepare only light desserts for her, much to the consternation and annoyance of her notoriously austere husband. Upon being presented with the chef's masterpiece, she found it too rich and refused to eat it. The exasperated Francis Joseph quipped, "Now let me see what "Schmarrn" our chef has cooked up". It apparently met his approval as he finished his and even his wife's serving. Thereafter, the dessert was called Kaiserschmarrn across the Empire.
As you can see, Kaiserschmarrn recipe have interesting history. And because is so easy to make, you can have a royal meal at home anytime you want.
