Get To Know Your Kefir

These grains resemble sugar crystals and feed on sugar or molasses. You will need to create sugar-water solution in order to start the fermentation process.

Second Type of Kefir

type=textAnother kefir grain is called milk kefir. As the name implies, it requires milk such as goat's or cow's milk instead of sugar-water mixture. You can also use coconut milk as healthier alternative. The grains are white and looks like very small cauliflowers.

Fermentation Process

Whether you have milk or sugar kefir, the fermentation process is relatively the same. The kefir grains will feed on the medium available (such as sugar or milk). The result is that they will multiply their number while giving off carbon dioxide, lactic acid and alcohol as its by-product.

Kefir is also very rich with probiotics, vitamins and minerals and these are also given off during the process.
