You Want to Make Coleslaw Just like KFC's?

What is it about KFC Coleslaw that provokes such adoration from its fans? "It tastes just like they make at the fast food restaurant," is not usually a positive comment. But people want the KFC Coleslaw recipe, and some people swear it's the best coleslaw they've ever had. Here are the recipes and variations I've found.

The Not-So-Secret Secret Recipe for KFC Coleslaw

A certain company has made a name for itself by selling cookbooks with "Secret" restaurant recipes. One of the most popular recipes in the book is the one for KFC Coleslaw. This is the recipe you see quoted most often on recipes sites around the web. It's circulated so much that I doubt most people even know that's where it came from.

KFC COLESLAW RECIPE FROM A "TOP SECRET" COOKBOOK

* 8 cups finely diced cabbage (about 1 head)
* 1/4 cup diced carrot
* 2 tablespoons minced onions
* 1/3 cup granulated sugar
* 1/2 teaspoon salt
* 1/8 teaspoon pepper
* 1/4 cup milk
* 1/2 cup mayonnaise
* 1/4 cup buttermilk
* 1 1/2 tablespoons white vinegar
* 2 1/2 tablespoons lemon juice

Directions

Finely dice cabbage and carrots.
Place cabbage and carrot mixture into large bowl and add minced onions.

Using regular blade on food processor, process remaining ingredients until smooth.

Pour over vegetable mixture and mix thoroughly.

Cover bowl and refrigerate several hours or overnight before serving.

Variations on a Theme 

Not everyone agrees that this is the correct recipe for KFC Coleslaw.

Here are several variations of the recipe, in no particular order.

VARIATION #1
1 head cabbage, shredded
1/4 cup carrot, finely grated
1 part mayonnaise
2 parts vinegar
1 tsp Sugar
2 Tablespoons green onion, finely minced
salt and pepper to taste

Combine cabbage and carrots.

Mix together mayonnaise, vinegar, sugar and green onion.
Pour over cabbage mixture. Season to taste. Refrigerate
for several hours before serving.

Note: I suspect the author of this recipe meant 2 parts mayo to 1 part vinegar, but I could be wrong.

VARIATION #2
The author claims that tarragon vinegar is the secret
ingredient in authentic KFC cole slaw.

4 1/2 teaspoons tarragon vinegar
6 1/2 tablespoons vegetable oil
3/4 cup chopped onion
2 1/2 cups Miracle Whip
1 cup sugar
2 carrots
2 heads cabbage

Mix oil, onions and sugar.

Add tarragon vinegar.

Fold in Miracle Whip.

Pour over grated carrots and cabbage and mix well.

Refrigerate in an air-tight covered dish.

VARIATION #3
The author of this recipe claims to have worked at KFC and
made a whole lot of KFC coleslaw. He says that the dressing
contains only miracle whip, tarragon vinegar, salt and sugar.
