Create Family Memories - Bake a Cake!

My earliest memories are kitchen memories. I come from two cooking families and spent many happy hours with parents, grandparents, aunts, uncles, and cousins in the kitchen. Today, I'm the grandmother and hope to pass on my experiences, stories and recipes to my children and grandchildren. Baking is a wonderful way to teach, share, and connect-especially with family. And you get dessert out of it too!

Rules to Bake By

  • Ask if you can use the kitchen.

  • Wash your hands before starting your baking or cooking project. If you drop something on the floor or touch the trash can wash them again.

  • Read over the recipe.

  • Gather all necessary ingredients and set them out on the table or counter.

  • Follow the recipe exactly.

  • Get out all the pans and baking tools you'll need.

  • Use pot holders or oven mitts to take pans out of the oven.

  • Clean up as you go.

  • Share your baking creation with family and friends.

These cakes are easy and kid friendly

VANILLA CAKE
Makes 16 Servings

2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon fine sea salt
1/2 cup (1 stick) unsalted butter, softened
1 cup granulated sugar
3 eggs, room temperature
2 teaspoons vanilla
3/4 cup whole milk, room temperature

Preheat oven to 350 degrees. Grease and flour two 9" round cake pans; line bottom of pans with parchment.

Sift flour, baking powder, and salt together; set aside. Put butter in a medium sized bowl and beat with an electric mixer until creamy. Gradually add sugar and continue beating until light and fluffly, scraping down butter as needed. Add eggs one at a time, mixing just until blended. Add vanilla. Add the flour mixture in 3 additons, alternating with milk in 2 additions; mix thoroughly.

Pour batter into prepared pans and bake 20 to 25 minutes or until a cake tester comes out clean. Allow layers to cool in pans for 10 to 20 minutes minutes. Run a butter knife or flat metal spatula around edge of pans and turn layers onto a wire rack to cool completely. Frost cake as desired.

CHOCOLATE CAKE
Makes 22-24 Servings

1/2 cup unsweetened cocoa powder
3 cups all purpose flour
2 teaspoons baking soda
1 teaspoon fine sea salt
1 cup (2 sticks) unsalted butter, softened
1 1/4 cup granulated sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla
2 cups buttermilk

Preheat oven to 350 degrees. Grease and flour three 9" round cake pans and line bottoms with parchment*.

Sift cocoa, flour, baking soda and salt together; set aside. Put butter in a medium sized bowl and beat with an electric mixer until creamy. Add sugars and continue beating until light and fluffy, scraping butter down as needed. Add eggs one at a time, mixing just until blended. Add vanilla. Add the flour mixture in 3 additions, alternating with buttermilk in 2 additions. Mix thoroughly. Pour batter into prepared pans and bke 25 to 30 minutes or until a cake tester comes out clean.

Allow layers to cool in pans for 10 to 20 minutes. Run a butter knife or flat metal spatula around edge of pans and turn layers onto a wire rack to cool thoroughly. Frost cake as desired.

*I use unsweetend cocoa powder instead of flour when preparing pans for baking chocolate cakes

The Finishing Touch for Your Cakes

Easy Squeezy Frostings

kids cakeVANILLA BUTTER CREAM
1/2 cup (1 stick) butter, softened
3 1/2 cups powdered sugar, sifted
1/4 cup whole milk
2 teaspoons vanilla extract, almond extract, or lemon juice

Put butter in a large bowl and beat with an electric mixer until creamy. At low speed mix add powdered sugar. Gradually add milk until desired consistency is reached. Add flavoring. This makes enough to fill and frost a 9" layer cake.

CHOCOLATE BUTTER CREAM
16 ounces powdered sugar
2/3 cup unsweetened cocoa powder
1/2 cup (1 stick) butter, softened
5-7 tablespoons whipping cream or half and half
1 teaspoon vanilla

Sift together powdered sugar and cocoa; set aside. Put butter in the bowl and beat with an electric mixer until creamy. At low speed add powdered sugar mixture . Gradually add milk until desired consistency is reached. Add vanilla. This makes enough to fill and frost a 9" layer cake.

    baking with kids is a wonderful family thing to do. Kids need to learn how to cook and in the process they are learning reading skills and math skills and they don't even know it.

    Great suggestion!

    I think it's important to share normal tasks with the family. It can be fun AND and bonding experience. :)
