Nope, I can't follow directions.

You would think that for someone who doesn't have a tasty cooking history I'd follow directions more often, but I'm known for creating my own concoctions the first time out of the chute.

So far, my boyfriend has loved all my creations. Or so he claims.

This is a short list of recipes I've created. I'm sure it will fill up fast, so keep an eye out for new stuff!

Stuffed Pork Tenderloin 

I first made this for my boyfriend and grama for Easter dinner, and there were absolutely no complaints!

Ingredients:
1 boneless pork chop for each person, thawed
1 box pork Stove Top stuffing for every 4-5 chops
butter or margarine

Tools:
oven bags (often used for turkeys)
cooking spray
toothpicks or kitchen string
baking pan
sauce pot

Directions:
Preheat the oven to 350^F. Cook the Stove Top according to directions. (If you have your own favorite stuffing recipe, use it!) Slice the thawed pork chops hamburger bun style leaving the two halves connected by a centimeter. Fill each chop with dressing and close with kitchen string or toothpicks around edges. Spray top and bottom of each chop with cooking spray. Place in oven bag on baking sheet and close loosely (you may want to cut the bag down to size). Bake for 50-60 minutes or until center reaches 160^F.

Alterations:
I haven't attempted coating the chops with any types of seasonings, but if you have a suggestion, leave it below!

Spaghetti Pie 

I've found dozens of recipes for this but ended up making my own. For this one, I go a lot by sight, instead of measurement. Read on to see what I mean.

Ingredients:
1/2 - 1 pound spaghetti (I prefer angel hair)
3 - 5 eggs
small bag sliced pepperoni
shredded cheese of your preference
small can olives
small can mushrooms
medium jar pasta sauce of your preference

Tools:
pie or regular baking dish
pasta pot or pot and colander
mixing bowl
whisk
cooking spray

Directions:
Preheat oven to 325^F. Boil and drain pasta according to directions. Whisk 3-5 eggs into pasta, looking for a thick, soupy consistency. Eggs should coat pasta but not pool in bottom of bowl. Grease baking pan and pour in pasta mixture, making it no more than half (the height of the pan) deep. Layer pepperoni, olives, and mushrooms (and 1/2 of cheese if you wish) on top. Gently spoon spaghetti sauce on top, and cover with rest of cheese. Bake for 25-30 minutes or until pasta/egg mixture is solid and doesn't drip when lifted at the corner.

Alterations:
If you wish, add ground beef or turkey! I'd like to try this with alfredo sauce, chicken, and broccoli. If you do, tell me how it is!

Twice-Baked Potato Casserole 

I got the idea for this from a cheese and potato only recipe, and added my own mexican flavor.

Ingredients:
8 medium potatoes, baked, cooled, and diced
1 1/2 cups shredded cheese of your preference
small can black olives
small bag bacon bits
small container sour cream

Tools:
9x13" baking pan
cooking spray
small ice cream scoop or spoon

Directions:
Preheat oven to 350^F. Grease baking pan and layer half of potatoes in bottom. Gently scoop sour cream on top to layer. Sprinkle on olives, bacon, and half of cheese. Cover with rest of potatoes, then rest of cheese. Bake for 30 minutes, or until cheese is melted.

Alterations:
I would have used real bacon, but I was lazy. This could also be good with ground beef or turkey, but I hate browning beef.

Fiesta Baked Corn 

This is an altered version of a baked corn recipe I like.

Ingredients:
Can sweet corn
Can creamed corn
1 each red, yellow, green bell peppers
3/4 c. milk
3 T butter melted
3 T flour
1/4 c. white sugar
3 eggs

Tools:
9x13 baking pan, greased
mixing bowl
spatula
Magic Bullet Blender System (or other mixer and small bowl)

Directions:
Preheat oven to 375^F. Mix can creamed corn and can drained sweet corn in bowl. Chop 1/3 of each of the bell peppers and mix with corn. Mix eggs, milk, butter, flour, and sugar in tall cup (or small bowl) and blend thoroughly. Mix with veggies. Bake for 90 minutes or until corn cakes when lifted at corner.

Alterations:
Add peas, chopped mushrooms, black olives, and cheese. If adding additional veggies, add another egg.

Poor Girl's Vegetable Soup 

I had a craving for tomatoey veggie soup one day so I made this just from what I had in my cupboard.

Ingredients:
1 can sweet corn (drained)
1 can sweet peas (drained)
1 can sliced carrots (drained)
2 cans diced tomatoes
1 can dark red kidney beans
1 cup water
pepper to taste

Tools:
Crock pot
Spoon
Ladle
Can opener

Directions:
Mix all ingredients in crock pot and heat on low. (Be sure not to drain tomatoes or kidney beans.)
