Prepare Kimchi - Korean Cabbage Delicacy

Kimchi or gimchi or kimchee or kim chee is made many different ways. There is the popular baechu (cabbage) variety, kimchi stew (kimchi jjigae), kimchi fried rice (kimchi bokkeumbap), hot radish kimchi (Kkaktugi), and many more. Kimchi is fermented so it will last longer without spoiling.
There is no red dye #3 here [used to color foods]. Many kinds of kimchi are made with chili peppers, which give it a red color and hot, spicy flavor. Whether gimchi stew or kimchee rice, they all taste mouth-watering. Here we will learn how to prepare the popular baechu (cabbage) variety of kim chee.

INGREDIENTS: 5 c. water, 1 Napa cabbage head, 1 tbsp. ginger, 1 tbsp. sugar, 1/2 c. coarse sea salt, 1/2 Garlic bulb, 2 Scallions, and 1 Red pepper.
Instructions
STEP 1 - Mix water and sea salt in a large bowl.
STEP 2 - Wash cabbage and cut into 2-inch squares. Add cabbage to salt water.
STEP 3 - Soak cabbage for approximately 6 hours.
STEP 4 - Remove cabbage and rinse with cold water.
STEP 5 - Chop garlic bulb fine. Cut scallions into 1/2 inch pieces. Cut red pepper into 1/2 inch pieces. Mix garlic, scallions, red pepper, ginger, and sugar into bowl.
STEP 6 - Add cabbage and mix (Optional: Add seasoning of choice).
STEP 7 - Press cabbage into a large jar. Use lid to seal airtight.
Note: Some use a cloth or special jar with a vent to allow for expansion.
STEP 8 - Let kimchi ferment in a cool place for 2 - 3 days before serving or putting in refrigerator.
STEP 9 - Optional Fermenting Method - In Korea, they bury their kimchi fermenting pots. The ground maintains constant temperature allowing the kim chee to ferment evenly. Letting kimchi ferment [rot] in the ground makes the best kimchi.
STEP 10 - For those that cannot wait for their kimchi to ferment, kimchi is sold in many grocery and specialty stores.
Note: Kimchi is nutritious and contains lactic acid, minerals, and vitamins promoting good health.
