King Ranch Chicken Casserole
An Easy Recipe for King Ranch Chicken

The classic king ranch casserole is made with corn tortillas and sauteed onions and green peppers. This version streamlines the prep a bit by using tortilla chips (no need to cut or shred the corn tortillas) and prepared salsa instead of the vegetables (nothing to chop or saute). The tortilla chips also lend a wonderfully crunchy texture to this popular casserole recipe.
To make this king ranch casserole taste a bit more "gourmet," use a good-quality salsa and organic cream of mushroom or cream of celery soup. Trader Joe's makes a good cream of portobello mushroom soup. Pacific Natural Foods makes a nice cream of mushroom soup, too.
Ingredients
- 3 cups shredded cooked chicken
- 2 10.75 oz. cans condensed cream of mushroom or cream of celery soup
- 1 14 oz. can diced tomatoes with green chiles
- 1 cup prepared salsa
- 1 tsp. chili powder
- 1 10 oz. bag tortilla chips
- 3 cups shredded Mexican cheese blend
Instructions
1. Preheat the oven to 350 degrees F.
2. In a large mixing bowl, combine shredded chicken, cream of mushroom soups, canned tomatoes, salsa and chili powder.
3. Spread the tortilla chips on the bottom of a 9 x 13 baking dish. Spread the chicken mixture over the tortilla chips. Top with the shredded cheese.
4. Bake the king ranch casserole 30-35 minutes until golden and bubbly.

- Yes, I love this dish. The chips are a good idea. Like you said even quicker. I always browned up the tortillas first so this is a big time saver.
