Often dismissed as an 'old man's' food, Kippers are one of my favourite fish. If you are looking for fish recipes with a difference, kippers might be the inspiration.

I used to work for a company where we had a visiting director. He was Scottish and he had kippers and porridge for breakfast every morning at the local hotel where he stayed.Today Kippers are making a come back in high class restaurants where the delicate smoky flavour of this fish is used in a variety of dishes.

In the past a Kipper was any sort of smoked fish, including salmon and haddock.
