Recipes for Kippers a great fish dish

Often dismissed as an 'old man's' food, Kippers are one of my favourite fish. If you are looking for fish recipes with a difference, kippers might be the inspiration.

I used to work for a company where we had a visiting director. He was Scottish and he had kippers and porridge for breakfast every morning at the local hotel where he stayed.Today Kippers are making a come back in high class restaurants where the delicate smoky flavour of this fish is used in a variety of dishes.

Kipper Knowledge

A kipper is a whole herring, a small, oily fish, that has been split from tail to head, gutted, salted or pickled, and cold smoked.

In the United Kingdom and North America they are often eaten grilled for breakfast. In the UK, kippers, along with other preserved fish such as the bloater and buckling, were also once commonly enjoyed as a high tea or supper treat; most popularly with inland and urban working-class populations before World War II.

Where does the word 'Kipper' come from?

Piscatorial etymology

There a various explanations of the origin of the term 'kipper'. Some say it means to 'catch'.

Which might have something to do with English phrase 'to be kippered' meaning to be forced into a corner.

Inspirational Kippers

Tell me the name of any other fish that has inspired a fashion trend?
The Kipper Tie was a 60s fashion icon.

The term Kipper Tie has also been used to satirise the English Black Country accent. This is the accent used around the city of Birmingham.

The Brummie accent goes something like this:

Person 1 "Would you like a Kipper Tie?"

Person 2 "No thanks I've just had one"

The meaning of this joke is the pronunciation of Kipper Tie as a substitute for Cup of Tea.
