I love to cook. I love finding and trying new recipes. I love even more putting my own twist on the recipes I find to make them my own. I must admit that I don't actually have to open a cookbook much any more. That doesn't stop me from wanting to buy them, and look through them.

Over time, here at Squidoo and now elsewhere, I have been promoting good, wholesome home cooking using seasonal and local produce. My recipes are easy to follow for even the least confident cook and create delicious meals which can be enjoyed by the whole family.

We love roast dinners

Nothing can beat sitting down to eat a roast dinner with friends and family. Besides tasting good, Sunday lunch gives us a day during the week when we can sit down together as a family and have a good meal.

We clear the dining table of whatever project the boys might be doing that week, pull out the serving dishes (well, the various casserole dishes), and sit down together at the table.

Daddy carves the meat using the carving knife and fork handed down to him by his grandfather. Mummy dishes up the sides for little boys. Pour a glass of wine.

Creating filling meals for a busy family

During the week, I use up leftovers from our Sunday roast and plan meals around whatever is planned for the week. Trying to accommodate the tastes of two adults and two children with varying degrees of Asperger's Syndrome who both have particular food issues.

One won't eat cooked carrots and cannot tolerate any sauces or gravies or his foods being mixed together. The other has to top and tail any food he gets before eating it.

I do not want to cook two meals, or three, so I have gotten creative in working around their food issues. Before making a meat pie, for instance, I will pull out meat, veg, and potatoes and keep those aside on a plate to be reheated before eating for Thing 1. He does like some pastry, so if we have a pastry crust we will cut out shapes and cook those separately for him to have on his plate. When we have carrots I always leave a couple to the side for him.

My husband travels frequently, so I have to plan around his travel schedule as well. I don't want to be stuck with too many leftovers or plans for larger dishes when he isn't here. That is when I tend to fall back on the simpler dishes.

A Little Something on the Side

Sides Make the Meal

side dish - peasThere never seems to be much focus on side dishes, but they really do make the meal.

I know that I associate different vegetables with different dishes. Broad beans with gammon. Green beans with fried chicken. Peas and corn with shepherd's pie.

We have to have applesauce with pork dishes, chutney and baked beans with sausages, and bread sauce with roast chicken and turkey. They go together.

I fully admit that I don't get very imaginative when it comes to vegetables. Steamed or lightly boiled with a small bit of butter over the top is good enough for me. I go with the idea that good food doesn't need lot of fancying up, and I know I am using very good vegetables.

I am always wanting to wipe my hands on something when I am in the kitchen. A good apron not only protects your clothes, it gives you a handy cloth for wiping your hands too.

After Meal Treats

Much to my family's dismay, I don't make puddings and desserts very often. Quite frankly, by the time we get to the end of a meal, I'm too full to eat one anyway.

Anyway, this way the after meal treat really is a treat. Something we all can enjoy and look forward to.

    Beautiful lens. We used to have Sunday roasts in Australia but its far too hot in summer and too busy in winter for them now. But we do manage a good meal 5* and fave. You can set me a place at your table anytime,.
