Kitchen & Cooking Tips : People with bad back, neuropathy or range of motion and strength problems
The phrase limited mobility may bring some stereotype to mind, but soon a large percentage of the United States Baby Boomer generation will be over sixty. Sports injuries and simple facts of aging are catching up with us. More and more of us youngsters are using canes these days.
There are a multitude of problems that can make us have troubles reaching, moving around, lifting heavy pans, performing tasks such as chopping. Sometimes two-handed kitchen tasks have become a problem.
This is aimed at persons who may have a spine or other injury causing limited mobility, trouble walking, sitting or standing for any length of time. It will also address range of motion issues and trouble with strength in arms, shoulders, hands, back and legs.
This is aimed at people who are walking at least some of the time. Many of the accessible home articles that I've seen cover so many types of disability and this is trying to be a little more specific. Accommodation for a person who is in a wheelchair or someone who is blind would probably be different from what would be needed for someone who cannot raise his arms or feel his feet. Everyone is different and each person should consider his or her situation and if necessary should consult a professional before choosing to make changes to any routines. This lens will provide some advice from various sources. Check with your medical professional before choosing anything for yourself or your home.
You may need or want to consider your home's resale value when thinking about making changes to the structure or even to appliances. The structural changes suggested will usually cost at least something in labor, insurance and/or cash. Several of the changes may offer people more comfort and more time in their homes. Depending on your situation, partial financing may be available. Is it a choice between your quality of life and independence vs. what you predict is a percentage of future resale value? This gets sticky.
People with disabilities and the the elderly are of course interested in these tips. Consider too, the forty-year-old with the chronically painful basketball injury. Maybe she or he could be thinking about doing something to make day-to-day tasks a little less taxing on the old back.
What you don't need is something at home aggravating a repetitive motion injury, for instance. A change in kitchen and/or bathroom faucets could help soothe those aching wrists.

Beyond that, the new mantra in kitchen design is multiplicity. "Multiplicity acknowledges the variety of sizes, shapes, ages, and abilities of people who are in the kitchen," Mary Jo Peterson said. That means not just older homeowners, but also kids, short adults, tall adults, and individuals with limited mobility. In other words, everyone.
"Universal design is something that benefits not just one target group, but every target group," she said.
In the future, houses with the best resale value may well include kitchen work surfaces and storage areas of varying heights, with appliances that are easy to reach. Drawer appliances (dishwashers, refrigerators, and even microwaves) are gaining popularity, as are side-by-side refrigerators and ovens, and storage options that fall between 15 and 48 inches off the floor.
One of today's most popular configurations that is not universally-friendly is the microwave/hood combo that comes standard in many builder appliance packages. "Whenever possible, it's better to put the microwave in a more accessible position that's easier for kids and others to reach so they are not reaching into the microwave over top of a hot stove," Camp advised. "Putting a microwave almost at counter level or even lower in base cabinets makes it accessible to anybody."

Cooking & Screaming: 21-year-old stroke survivor
Not many 21-year-olds expect to have a stroke while walking down the street of their college town, but that's what happened to Kane, food writer and blogger of nosheteria.com.
What started off as a casual stroll resulted in weeks of unconsciousness, months of rehabilitation in the hospital and years of daily therapeutic exercises, all due to an arteriovenous malformation (commonly known as an AVM), which initially left her completely paralyzed on her right side.
Drawing strength from her love for cooking, Kane started to make physical and emotional progress by relearning how to chop vegetables by using her immobile right hand as a weight.

'No Free Rides' with Tiffiny Carlson: Cooking episodes
"Most veggies can be bought pre-chopped in the frozen food section or the salad bar. My food processor also chops nicely and for slicing, I use a mandolin -- I have a friend with a C-level injury who tells me she finds the motion for using the mandolin much easier than the motion to slice with a knife plus, she doesn't have to stabilize the food she's about to slice.
"Look through your produce section for prepared herbs. Many can now be purchased in a tube (you can keep it in the freezer) or pre-chopped in jars. I usually buy garlic and basil this way.
"I have asked the produce manager to open melons, artichokes and squash for me without a problem; they take my picks in back, split it per my needs, wrap it in shrink wrap and price it (no charge for the splitting). Now I use an electric knife to do this.
"I have also charmed the butcher into sharpening my knives. .... I placed my microwave at knee level. Most kitchen designs will put it high but I don't want to reach over my head and put out hot food and liquids. I keep envisioning the burn pattern if I spill it and it showers over me. I also feel I have better accessibility with a counter-top installed cook top and a wall oven instead of a full size range.
"One of the things I can't do without is my battery operated pepper mill and salt mill. I am not comfortable with a big lean forward to use both hands to add cracked pepper or salt to a hot pot. The one handed mills allow me to safely maintain my balance while using these tools.
"I gained more knee room under my sink by picking a model that has the drains in the back of the bowl instead of the center. I had to buy a European manufacturer to get this feature but I got the sink at Home Depot at a competitive price.
"I wish I could redo my frig purchase. I love the pull-out shelves and I made sure I could reach the water filter to change it but I neglected to check to see if I could reach the controls for the ice-maker. If you choose a frig with these features, consider the placement of the controls. I cannot turn the ice maker off or adjust the size and shape of the cubes. Overall, not a life-changing issue but a feature of my appliance that I cannot use on my own. ....
"You can improve your QOL in the kitchen with small changes too. There, the big box stores offer good options for adding a few pull outs to existing cabinets. Browse around and see if small changes can open up the usable space in your kitchen.
"Last, while I work to make sure I can be as independent as possible; I am always willing to ask for help, in the kitchen, at the store, whatever. Before my injury, I was comfortable with delegating certain tasks to others, I see no difference now. Utilizing the best skills of others is one of the ways I save time and energy that allows me to concentrate on the things that matter most to me." Custom-Made Homes: Collins tailored the Waggoners' white ranch house to make life easier for them.
The mailbox is low enough for Jim to collect the mail in his wheelchair. There are no steps - just flat entries - and doorways are wide. All door handles are levers: Collins says a large share of seniors lose some dexterity, making it more difficult to turn traditional knobs.
In the kitchen, Collins points out the open space under the sink. That's to allow someone to do dishes while sitting, either in a wheelchair or on a stool, for rest. Even the wood in the walls is tailored: 2-by-8s instead of 2-by-4s. That lets the builder pop in a grab bar without ripping out the wall - and that saves money. Collins is adamant about building for the middle class.
'If you do it right from the beginning,' he says, 'it would normally cost you no more or very little compared in cost to any other conventional home.'
The price tag for the Waggoners' house is $171,000.
Collins is also proud that his homes look like any other. He says he loves it when people walk in and ask, 'Where's the handicapped house?' In fact, some of his features designed for accessibility are commonly found in glossy kitchen magazines: shelves that pull out like drawers, for example, and a faucet over the stove, to avoid having to lug a heavy pot of water from the sink. I use my kitchen scissors all the time. I also try to find other utensils in 'scissor' form so I can use them one-handed. This is a lot easier for me than using a knife. It's one-handed and does not require the strength, etc that using a knife requires.

- Built-in wall ovens can be positioned at various heights. Ovens with doors that open out, like a refrigerator door, may work better for you. Frigidaire has a 27-inch side-swing wall oven.
- With appliances such as refrigerators, you may be able to reposition shelves. They may be able to move lower if necessary for your convenience. Many refrigerators offer an assortment of slide-out shelves, baskets and bins. There are refrigerator-freezers which stand side-by-side, compact models or those with a freezer on the bottom.

...covered multifamily dwellings with a building entrance on an accessible route shall be designed and constructed in such a manner that all premises within covered multifamily dwelling units contain usable kitchens...such that an individual in a wheelchair can maneuver about the space.
Fair Housing Act Regulations, 24 CFR 100.205
Usable kitchens would meet section 100.205(c)(3)(iv) if:
1. A clear floor space at least 30 inches by 48 inches that allows a parallel approach by a person in a wheelchair is provided at the range or cooktop and sink, and either a parallel or forward approach is provided at oven, dishwasher, refrigerator/freezer or trash compactor. (See Fig. 6)
2. Clearance between counters and all opposing base cabinets, countertops, appliances or walls is at least 40 inches.
3. In U-shaped kitchens with sink or range or cooktop at the base of the "U", a 60-inch turning radius is provided to allow parallel approach, or base cabinets are removable at that location to allow knee space for a forward approach.
