Making Homemade Pasta with Kitchen Aid Attachments

Kitchenaid has a variety of pasta attachments for making pasta with the Kitchenaid stand mixer. You just need to know your mixer model to be sure you purchase the attachments that work with your machine. There is nothing like the taste of homemade pasta, and there are many ways to make it. For instance, you could make it out of spinach, tomatoes, zucchini, pumpkin, beets, or any other of your favorite vegetables. The following basic pasta recipe can be used to as the base to create your own special pasta recipes, or try one of the other homemade pasta recipes in this lens. By making your own pasta, you know it is fresh and healthy!

Basic Pasta Recipe

3 cups semolina flour or all-purpose white flour
3 eggs
1 to 2 tablespoons of water--only if necessary for dough consistency

Instructions:
Add flour and eggs to the stand mixer bowl. Using a flat beater on speed 2, mix until the dough combines. Change to the dough hook and mix for 30 seconds to 1 minutes, until the dough forms a ball. Cut the dough ball into fourths. Use the pasta roller attachment set at the widest setting and roll the dough out. Fold the dough and put it through the pasta roller until the dough is smooth. Change the pasta roller for the pasta cutter. Set the cutter for the pasta size you want and put the sheet of dough through it.

When cooking the pasta, be careful not to overcook. It will only need to cook 3 to 4 minutes. Serve with the pasta sauce of your choice!

If you don't have a pasta attachment, roll out very thin, then cut into narrow slices. Cook as above.

Spinach pasta is delicious!

Easy Spinach Pasta

1 1/2 cups spinach leaves, torn into small pieces
2 tbsp. water
1 egg
1 1/4 cups all-purpose flour

Instructions:
Simmer spinach in water until tender.
Pour cooked spinach and water into a blender and blend. Add egg and blend until thoroughly mixed.
Put into a stand mixer bowl. Add the flour to the spinach and mix on low speed to make the dough. If it crumbles add water 1 tsp. at a time. Change to a bread hook and knead for 1 minute. Break the pasta dough into 4 or 5 pieces and run through the pasta roller set at the largest setting to make a long flat dough. Put through the roller several times until the dough is smooth and elastic. Change to a pasta cutter. Set it to the size pasta you want, and put the dough through the cutter.
For later use, spread on a rack to dry. When you cook it, cook in boiling water for 7 to 10 minutes.
If you are cooking it immediately, it will not need to cook more than 3 to 5 minutes.
Serve with your favorite sauce and enjoy!

    Spaghetti, of course.. and hand cut is the way I learned how to make it.. now with all these modern appliances, there is really no excuse for store bought! Blessed!

    In as much as I am an accomplished cook, I have not made pasta at home. The problem has always been a lack of time. I now have more time as I am semi-retired and I am going to start making my own pasta. This lens is a very good reference, thanks for sharing. I hope life is treating you well.
