The Great Chocolate Mousse Mystery
An adventure story . . .
Once upon a time, in a far away land, hubby and I were enjoying dinner in a remote part of Belize (Central America). For dessert we had the best-ever chocolate mousse. We asked and they provided the recipe. Only one problem, it needed caster sugar, which apparently didn't exist in the states.
Eight years later we moved to New Zealand, the recipe still in my book. An American friend assisted me with the translations at grocery store. When we go to the baking aisle she said, "New Zealand has lots of different sugars, the closest one to American white sugar is called caster sugar."
Epilogue: The chocolate mousse was delicious! As good as I remembered. Did I mention that part of my deal in getting the recipe was that I was sworn to secrecy.

Afgan Biscuits - Try Them with This Simple Recipe
Delicious crunchy chocolate cookie

- Serves: 12-16 Biscuits
- Prep Time: 10 minutes
- Total Time: 25-30 Minutes
Ingredients
- 200 g butter
- 1/2 cup sugar
- 1 1/2 cups flour
- 2 tablespoons cocoa powder
- 1 cup slightly crushed corn flakes
- 1/2 cup desiccated coconut
Instructions
- Cream butter and sugar until light and fluffy
- Sift together flour and cocoa and mix into creamed butter mix
- Fold in corn flakes and coconut.
- Place teaspoonful balls onto lightly greased cookie sheets.
- Bakes at 180°C (350°F)for 15-20 minutes.

Fish Pie - A Delicious Smoke Fish Casserole
Another Kiwi classic dinner

- Serves: 4-6
- Prep Time: 30 minutes
- Total Time: 1.5 Hours
Ingredients
- 25 gm butter
- 1 Tablespoon Milk
- 3 cups cooked potatoes
- salt and pepper
- 1 Tablespoon butter
- 1 Tablespoon flour
- 1 cup milk
- 500 gm Smoked Fish tinned
- 1 Tablespoon chopped parsley (optional - we leave it out)
- 2 hardboiled eggs
Instructions
- Mash potatoes, mixing first measure of butter and milk. Season with salt and pepper.
- Melt remaining 1 tablespoon butter in a saucepan, take off the heat and slowly add flour, put back on heat until butter is just bubbling again, then gradually add milk.
- Stir till mixture thickens and cook for 4-5 mins to make a good white sauce.
- Add parsley, chopped eggs and drained fish to white sauce and mix.
- Line a pie pan with half the mashed potatoes, fill with the fish mixture, and pile remainder of potatoes on top. .
- Cook at 180 C (350 F) for about an hour, or until the pie is cooked thru and the potatoes are browned.
