Knickerbocker Glory - A Great Summer Treat
A knickerbocker glory ice cream was the greatest summer treat in the world when I was a child. Not only was it Big with a capital B, it was also expensive.
It was something that neither my mother, nor anybody else I knew, ever made at home.
When we were visiting the seaside and sitting in an ice cream parlour, I would look longingly at other people, particularly kids, eating knickerbocker glories. They were served in tall cone shaped glasses and had to be eaten with an especially long spoon that reached right to the bottom.
Now, ice cream isn't such an expensive luxury as it was when I was a kid so a knickerbocker glory is affordable and it's surprisingly easy and quick to make particularly as none of the ingredients need cooking.

Recipe for a Great Summer Dessert
How to Make a Knickerbocker Glory
The ingredients are flexible - choose whatever you like best and vary quantities according to the number of Knickerbocker Glories you are making. Here are some suggestions.
Ingredients
2 different coloured ice creams, eg vanilla and strawberry
Ice cream syrups or sauces, perhaps 2 or 3 different flavours
Summer fruit, eg blueberries, strawberries, raspberries
Jello (jelly) dessert, make it according to instructions and then chop it up into small pieces
Whipped cream

Method
The Knickerbocker Glory is very simple to make. Just layer your ingredients in glasses except for the whipped cream. This usually is put on top although you can top it with ice cream instead.
Decorate with chopped nuts, or one of the berries, an ice cream wafer or whatever takes your fancy.
Neapolitan Ice Cream
Tip - You can use this in a Knickerbocker Glory

Instead of buying separate colours or flavours of ice cream, you could just buy one carton of Neapolitan ice cream.

These Glass Dishes are the Right Shape
Anchor Hocking Clear Crystal Soda-Fountain Glass, Set of 12
Amazon Price: $28.84 (as of 02/15/2012)![]()
At 7ins, these glass dishes aren't as tall as the traditional British Knickerbocker Glory dish, they are tall enough to take layers of fruit, icecream and flavoured syrup. They are also the correct shape - very important in my opinion.
Newsview gave them 5 stars in the Amazon.com review and said, "...Sure they harken back to the 1950s (and even earlier). But does it ever go out of fashion to serve your ice cream and soda deserts in style? Not in my book. These are stylish and classy..."

- This sounds like the sundaes from the old-fashioned soda fountain. Now I have to go buy some ice cream. Sprinkled with dust from the Angel of the farmyard on a Back to School Field Trip.

- Something new. I wonder if that name originated somewhere, Knickerbocker is a common name in my area. Not as a last name but as a name for things such as Knickerbocker Arena, Knickerbocker Park and so on. I think there were a family of Knickerbocker's that settled in my area when they first came here to settle. Just a little history. It's interesting and looks delicious.
