Kombucha Tea Recipe, ingredients and instructions
At present time Kombucha tea is hyped a bit by celebrities and health fanatics but the beverage has a long history. The living tea goes back all the way to approximately 200 BC and has been consumed in Japan, China, Russia and Korea for centuries.
Brewing your own Kombucha tea at home must be taken with care. The process can be time consuming and messy. Apart from that the recipe must be followed securely in order to keep health risks out.
What is Kombucha tea?

Kombucha tea is fermented and sweetened black or green tea. The tea is often referred to as mushroom tea but that isn't correct. Yeast and bacterial cultures are used in the brewing process and while the culture on the surface of the fermenting beverage looks a lot like a mushroom it actually isn't.

Common misconceptions about Kombucha tea
Kombucha is not a mushroom, so Kombucha tea isn't a mushroom tea. Actually it has nothing to do with mushrooms. It's just a popular way of naming.
It is unsafe to brew your own Kombucha tea.
Every kind of food you prepare has a risk of being contaminated. Of course one must be careful with preparing Kombucha tea. Especially because it is a fermented product but it certainly is not unsafe to brew Kombucha tea yourself.
Drinking Kombucha tea will change the Ph value of your blood.
Non sense. KT is about as sour as orange juice if fermented the appropiate amount of time. With a longer fermentation process the liquid will get more sour. But then one still has to drink huge amounts in order to change the ph value of ones blood.

I love Kombucha tea! I brewed it for about 1 1/2 years. Then I went through a very busy time, and didn't take time to separate the layers in the mushroom. ( I was using the continuous brewing system) the one with the ceramic urn with a spout for dispensing the tea) The mushroom got to be about 3 inches thick and was beginning to dry out. So I cleaned out the urn, and have not made any since. But, I really do miss it. I bought it to help with acid reflux, and I believe that it did help to balance me out. I also enjoyed it a lot when I added fresh lemon juice, ginger and raspberries. Wow, was that good.

Years ago a friend introduced me to kombucha, unfortunately I stopped brewing when I lived overseas. It is now very hard to obtain any of the culture where I live but I shall try a little harder. Thank you for your lens and for reminding me of this great drink. It is great for digestion and I found it had a cleansing effect.

What is scoby?
Kombucha Scoby, Culture, Mushroom...
Scoby is an acronym for Symbiotic Culture of Bacteria and Yeast. A difficult name for the mushroom or culture as it is called that is needed to brew your own Kombucha.
The Kombucha scoby (culture) looks like a white or beige rubber pancake. The scoby is placed in the jar with the tea and sugar where the ingredients turn into a mix of vitamins, enzymes, organic acids and minerals.
