Kotlety Mielone- Polish Burgers- Free Recipe

Kotlety Mielone was introduced to me a few years ago when my girlfriend Marta and I met, it's basically a burger with some slightly different twists. It is definitely the best I have tried and being homemade it makes all the difference. Traditionally it's a Polish dish and is normally eaten at tea/dinner time, after work.


Usually it is served with potatoes and saurkraut, a shredded cabbage salad. We however have them the less traditional way and have it with either salad, potatoes, chips (homemade of course) or in a bun. I hope you find this lens interesting and please try the recipe, you wont be disappointed.

You know what is going in them, this is so important as a lot of ready made and fast food burgers actually contain many more ingredients than you are aware and probably would like. Even if they state that it contains 100% beef (for example) it does not mean that 100% of the product is beef, just that it contains some beef. This could mean that 25% of your beef burger is 100% beef and 75% is only 25% beef. The rest can be made up of other parts of the animal, and other fillings and additives..

Chemical powders and liquids are added to enhance flavor and the look of the product while extending shelf life. This seems odd as when you make home-made burgers you don't have to add any of these to make them look or taste good and if you freeze them they can last just as long.

One chemical which has recently been in the press is Monosodium glutamate (MSG) which is a flavor enhancer. Although not necessarily bad for you it not always something you need in your food, especially when you could find 10 or 20 different additives and colours in one product.
Some big names in food contain these additives which might explain why they are doing so well.

This is the basic recipe, add your own additional ingredients to suite your own tastes...

Burgers can be made with either beef or pork but will turn out better if you do half and half, quantities can be changed depending on needs. We make a large batch and freeze them in portions for days when you need a quick meal.

This will make approximately 20 burgers

1...Beef mince, 500 grams
2...Pork mince, 500 grams
3...Breadcrumbs, 3oo grams for mixing
4...Eggs, 2-3
5...Onion 1-2 medium sized.
6...Garlic, at least 2 cloves...
7...Salt, large pinch
8...Pepper, extra large pinch
9...Herbs and Spices to taste, use your own favorites. We use Rosemary, thyme, parsley, chives, paprika, chilli, cumin etc.

Our secret ingredient is a piece of cheese (cheddar works very well) added in then middle of the burger...meltingly good.

Other ingredients can be added dependent on your own tastes.

Red pepper and mustard,

Peanut

Apple and sage

Brie, soft French cheese


Have a play yourself and see what you come up with.

Method

Roll up your sleeves and ge stuck in.

1...Chop onions finely,

2...Chop garlic finely,

3...Put mince in to large bowl with onions and garlic,

4...Add any additional ingredients being used,

5...Add seasoning and herbs,

6... Mix well with your hands to evenly distribute all ingredients,

7...Cover and leave in a cold place for 1-2 hours (optional).

Home-made is the best as you can make them to your own taste. You can add what you want and create the perfect burger and size does not matter!!!

Get stuck in.

Time to get messy.

8...Uncover your mixture,

9...Add your breadcrumbs and mix, use your hands it's good to feel the food to ensure even distribution,

10... Break in your eggs and mix thoroughly,

11... Have an extra plate handy, put a couple of handfuls of flour or very fine bread-crumbs on it, (this is to bind the outside
ready for frying).

12...Take a medium sized handful of your mixture and form in to a ball, (this is where we push a bit of cheese in the middle).

13...Place the burger in the flour/bread-crumbs and roll until covered, shake off the excess.

Save time and money

Second reason to go Home-made

You save money.

Here in England it can cost quite a lot for fast food and mass produced food has no real taste and does not fill you up.

If you buy fresh food not only can you generally make more, it combats hunger and can also cost less, it's a "no brainer" really.

Don't be put off that making food at home is time consuming, most meals are easy to prepare and can be made in the same time as you could re-heat prepared food or order a take-away etc.

Final steps.

Taste sensation.

14...Place in hot well oiled frying pan and press slightly flat to form in to a more traditional burger shape

15...Cook until browned before turning over, early turning can break your burger.

16...Flip and cook on the other side, check your burger properly as cooking time can differ depending on thickness.

17...Once cooked remove from heat and transfer to plate.

18...Serve with your choice of side, etc.

You can spend the time with your family or partner. We all need time away from our busy schedule, with so many families and people spending so much time in front of a screen, eg. TV, computer or games console it's hard to remember to do such a simple task of cooking and eating together.
