In the fall you can cut the lavender plant down to a few inches above the ground so new growth can come up in the spring. This great perenntial takes very little water. It's a fairly hardy plant, too, that can withstand harsh winters. There are a huge variety of species of lavender.

Lavender Vinegar Recipe
10-17 lavender sprigs
1 pint white vinegar (boil for 2-5 minutes)

Cut lavender sprigs to fit inside a glass bottle or jar. (Sterilize jar if using lavender vinegar for cooking.) Rinse flowers in cold water to remove dirt. Put lavender (flowers down, stems up) into jar and pour vinegar to the top of the bottle. Seal and let sit for 2-6 weeks before using.

Be Aware Of Possible Adulterated Essential Oils 

The following is quoted from the text Essential Oils Integrative Medical Guide.

"Today much of the lavender oil sold in America is the hybrid called lavandin, grown and distilled in China, Russia, France, and Tasmania. it is brought into France and cut with synthetic linalyl acetate to improve the fragrance. Then propylene glycol, DEP, or DOP (solvents that have no smell and increase the volume) are added and it is sold in the United States as levender oil."

"Often lavandin is heated to evaporate the camphor and then is adulterated with snythetic linalyl acetate. Most consumers don't know the difference, and are happy to buy it for $7 to $10 per half ounce in health food stores, beauty salons, grocery and department stores, and through mail order. This is one of the reasons why it is important to know about the integrity of the company or vendor from which you purchase your essential oils."

"Adulterated oils that are cut with synthetic extenders can be very detrimental, causing rashes, burning and skin irritations. Petrochemical solvents, such as dipropylene glycol and diethylphthalate, can cause allergic reactions, besides being devoid of any therapeutic effects."

"Adulterated and mislabeled essential oils present dangers for consumers. One woman who had heard of the ability of lavender oil to heal burns used 'lavender oil' purchased from a local health food store when she spilled biling water on her arm. But the pain intensified and the burn worsened, so she later complained that lavender oil was worthless for healing burns. When her 'lavender' oil was analyzed, it was found to be lavandin, the hybrid lavender that is chemically very different from pure LAVANDULA ANGUSTIFOLIA. Lavandin contains high levels of camphor (12-18 percent) and can itself burn the skin. In contract, true lavender contains virtually no camphor and has burn-healing agents not found in lavandin."

Recipe for Party Lavender Lemonade 

4 ½ gallons water
1 quart juiced lemons
1-1 1/2 quarts Blue Agave
10 drops lemon essential oil
10 drops lavender essential oil
4-8 Tablespoons concentrated lemon juice
Mix ingredients together. Pour over pebbled or crushed ice. Garnish with lavender sprig if desired. Makes 5 gallons.

Lavender Honey Salmon

Ingredients:
1/4 cup Extra Virgin Olive Oil
1/2 teaspoon dried leaf thyme
1 teaspoon fresh rosemary, chopped
Dash salt
Freshly ground black pepper
1/4 cup Young Living Lavender Honey
Olive oil for pan
4 salmon fillets

Combine oil, herbs, and seasonings in a small bowl. Cover and refrigerate for a few hours or overnight.

Combine the oil mixture with the lavender honey in a large food storage bag; place salmon fillets in the mixture, turning to coat well.

Cover and refrigerate for at least 2 hours or up to 4 hours.

Heat oven to 375 degrees

Heat about 1 Tablespoon of olive oil in a large ovenproof skillet; sear the salmon, skin side down, for about 4 minutes. Move the skillet to the oven and cook, uncovered, for about 12 minutes, or until salmon flakes with a fork. It will cook a little more when removed from the oven, so don't overcook. Serves 4
