Twisting leather and thread, sinew and bone, scale and armor, leatherworkers can outfit most adventurers too agile for harder stuff, but less docile than the mages, warlocks, and priests.  Indeed, there is a place in the world for the leatherworker, fine crafter of armor, various leathers, and armor kits.

Leatherworking 101

Leatherworking is one of the manufacturing professions in world of warcraft. Most of the time, this is paired with skinning so you can train up both skills at one time. Leatherworking is essentially all about the armor. Everything from making leather to make the armor to making the armor to making do-it-yourself armor kits.

The classes that will love this the most are rogues, hunters, druids, and sometimes shaman. It's a useful skill set to have, especially if you are a skinner, but really because making your own armor is pretty nifty no matter how you look at it.

Making Gold With Leatherworking

Making gold with leatherworking relies on both good supply and some demand. Armor kits will always sell, but high level pieces of armor are likely to be your cash cow once you figure out how to market them and which pieces sell better than others.
