Lebkuchen Hearts
Lebkuchenherzen or Gingerbread Hearts are very popular in open air markets such as Christmas Markets, Oktoberfeste, Kirmes or Schützenfeste. They usually hang from ribbons and carry cute sayings in the center. You give them to friends or lovers or your family to express your feelings. Lebkuchen is a very traditional German honeycake or gingerbread, dating from at least the 14th century. This is one of several versions we produce in our shop; they are shaped like small hearts and covered in chocolate. The honey used in baking them acts as a preservative, just as in the original.
Lebkuchen Heart Recipe
Ingredients
Cream butter and sugar in a large bowl, and beat in spices and zests. Heat molasses and honey to boiling, then cool for 10 minutes. Stir molasses mixture into butter, then beat in eggs. Sift 3 cups flour with soda and salt, and stir into batter. Stir in as much of the remaining flour as needed to get a soft dough (feels like a baby bottom). Shape into a ball and cover with plastic wrap. Chill until cold, overnight.
Roll dough 1/3-inch thick, cut into desired shapes and brush with slightly beaten egg white. Bake at 350 degrees for 12 to 15 minutes on a greased sheet. Do not let edges brown. Cool 10 minutes. Decorate with a very stiff royal icing (recipe below) piped onto thoroughly cooled cookies.
Makes 3 dozen cookies.
Royal Icing
In the bowl of your electric mixer (or with a hand mixer), beat the egg whites with the lemon juice. Add the sifted powdered sugar and beat on low speed until combined and smooth. Add food coloring, if desired. For immediate use, transfer icing to pastry bag or heavy duty storage bag and pipe as desired. Store in an airtight container as icing hardens when exposed to air. Cover with plastic wrap when not in use.
Makes about 3 cups.
